It is more enjoyable in winter but still a nice town. On your way and if you have time, visit the Soviet UFO Buzludzha monument (it is on your way) and you will like it. It will be freaking cold up in the mountains but you won't regret it.

The old parts of Plovdiv are more near the downtown. Like the Roman theatre of Philippopolis (the ancient name of Plovdiv) or the Stadium of Philippopolis, also a couple of more Roman ruins. There are also some nice colorful 19th century houses from the Ottoman period in the old town.
When you run out ideas and need a long series idea you could do a 100 dollar challenge with a tent but you have to stay in the city. So you have to stealth camp inside the city. There's a youtuber who does stealth camping he's super popular.
