Crackling tea pastries - cookies
350 g semi-coarse flour
300 g plain flour
350 g of ground breadcrumbs
25 g powdered sugar
3 eggs
1 pack baking-powder
rind from one lemon
Mix flour and baking powder.
Add lemon zest and powdered sugar.
Mix the ground crackers well with the flour mixture.
Add 3 whole eggs, mix the dough.
Let the dough stand for about 30 minutes.
Roll out the dough to a thickness of 0.4 mm and cut out cookies.
Bake at 190° for 15 minutes.
