    Looks really great! My tawa is similar, without a lip. And I'm not overtly too keen on using tissue papers on it to spread the oil as others have done. I initially thought your dosa technique as not exactly the best, thinking oh my god woman what are you up to! It looked a bit like a map to me, a map of Greece or even indonesia to be exact. They were your initial ones. Then you showed your real skill when you made the perfectly round final one which made me think, No, she knows what a dosa looks like alright! Anyway, Thanks!!!

    I used to use non stick tawa for making dosas and the other day I jus brought a new iron tawa. I didn’t know about the seasoning procedure so tot of checking in YT. Seeing this method looks interesting which I’ll try.
    Also before we add each batter do we add oil on the tawa? Coz I don’t do that with the non stick tawa.

      Yes ,use onion or cotton cloth to spread the oil towards all part of the tawa and don’t just pour oil simply on the tawa

      Cast iron is better than non-stick it's not cancerous and iron is healthy. Only we should properly season it that's all.

    Ma'am after cooking, there is this sticky brown oil layer formed. How do I remove it easily and clean the tawa Ma'am? I use pitambari but it's very laborious because I have to put all my time, effort and energy into scrubbing it off.
    Also I'd like to know how to store it after cleaning it.

      Amrita Srinivasan ,Can you please heat the Dosa tawa and spray some water on the Dosa tawa edges and use a old iron or steel knife or any iron or steel material to remove the layer ,Try this it will work

      @@avalskitchen1178 If it was a carbon layer then it would come of with heat and scraping with the metal spatula but it is a brown oily cooked on grease which was very tough and didn't come out even after such scraping multiple times.

    This looks different from what we generally see on road side. How to know the quality of iron? Purchased sodal company tawa from shop. Doubt if it is anodized alluminium tawa. But when magnet is placed near it, it sticks to magnet. Pls clarify.

      Do it again a couple of times using the onion on oil technique, make sure the temperature is hot. When you sprinkle water on it the drops should make tiny round balls and quickly evaporate. Watch videos on stainless steel frying pan non stick temperature

    No need to do this. You can simple place the iron tawa on high flame after cleaning it with soap. Sprinkle 2 tea spoon of salt and then rub it with a hard flat surface
    Until the salt turn brown.
    Wipe it with clean cloth and the pour some oil .let it heat then wipe it out with a wet cotton cloth...
    Not its ready
