Ingredients
⅓ cup olive oil
2 teaspoons lemon zest
¼ cup fresh lemon juice
2 tablespoons chopped fresh oregano
1 tablespoon Dijon mustard
1 tablespoon honey
¾ teaspoon garlic salt
¼ teaspoon ground black pepper
12 oz orzo pasta cooked according to package directions and rinsed with cold water
2 chicken breasts
2 tbls greek seasoning or
(1 tsp lemon pepper, 2 tsp garlic powder, 1 tsp oregano, 1/2 tsp paprika)
1 cup sliced halved English cucumber
1 cup halved grape tomatoes
½ cup halved pitted kalamata olives
¼ cup chopped fresh parsley
5 ounces pkg crumbled feta cheese
Directions
Season your chicken breasts with salt, pepper, and greek or souvlaki seasoning. Bake 350° for 30-40 minutes. Internal temp should be 160°. Let chicken rest before slicing or cubing.
In a large bowl, mix together olive oil, dijon mustard, honey, lemon juice, lemon zest, parsley and oregano. Stir in tomatoes, olives and cucumber. Stir in cooked and cooled orzo and feta.
Top each plate with sliced chicken or cube chicken and mix throughout the salad. Serve immediately, or cover and refrigerate for up to 2 days.

Looks delicious. I make a Greek pasta salad similar to this. There is a small, local boutique in Chestnut Hill, called the Pink Chestnut-she does tees that have lots of scriptures and religious sayings on them. She is about a mile from Bush’s Baked Bean Factory.

as a greek looks very good i do marinade my chicken in lemon and garlic and other seasonings overnight with a heavy object holding the chicken down like a brick wrapped in foil or any heavy object they also sell shawarma seasoning glad your back its gus again great job on the greek food

I'm really enjoying all of the cooking videos. We are having your air fryer country style boneless ribs, brown butter egg noodles and broccoli recipe I just found for dinner tonight. I would love to see some videos on some of your low or lower carb meals that I've seen delicious looking pictures of if possible. Hi, what you made with chicken sounds tasty, but I don't believe you know what Souvlaki is. "aki" at the end of a word, makes it small in Greek. So for example, a spoon is a koutala, but a small spoon is a koutalaki. So souvlaki means small souvla. What's a souvla? At Easter, Greeks often roast a whole lamb on a spit, or rotissarie. A souvla is a spit. A small one would be a souvlaki, in other words, a skewer. Souvlaki is kabob, and Greeks have been eating souvlaki for thousands of years. We cut meat into cubes, as you did, then the meat is marinated, then put on skewers, and then cooked on a grill. A souvlaki IS a skewer, what you made looks tasty...but it's not souvlaki.
