Cookin' with Batman: Bhagi (Spinach) Rice with Chicken | Taste of Trini

    Hi everyone! In this episode of Cookin' with Batman, he's going to show you a twist on the typical Bhagi Rice with Pigtails. For those who don't consume pork, Bhagi Rice with Chicken is the perfect alternative. Try Batman's recipe and I guarantee you'll love it.     Here's what you'll need for the recipe:
    1 large chicken or 2 regular sized
    15-20 dasheen bush leaves
    1 1/2 cup of green seasoning - • Caribbean Green Seasoning
    salt
    black pepper
    2 tablespoons vegetable oil
    2 tablespoons brown sugar
    10-20 cloves of garlic
    2 onions, slice
    2 cups of chopped pumpkin
    8-10 ochroes/ okras, chopped
    10-20 pimento peppers
    2 carrots,chopped
    1 sweet pepper, chopped
    5-8 whole corn, chopped into smaller pieces
    1 cup of chopped celery leaf/chinese celery or you can use celery stalk in place of it
    1 cup of chopped scallion/chive
    2 tablespoons of golden ray butter/french maid butter
    5 cups of parboiled rice (washed properly)
    The milk of 2 coconuts or 2 cans of coconut milk
    5-7 cups of boiling water
    2 4 packs of Maggi Soup Mix Thick and Spicy
    2-3 hot peppers (depending on your preference)

    I see that you served everyone first and yourself last and batman took the older ones' plates. That is broughtupcy! Your parents (and bats') must be very proud of you. I wish more children today were taught to respect their elders. Maybe Trinidad would be in a better place than where it is today.

    All you have do is put the coconut in a 350 degrees oven and leave it for about 15 to 20 mins and you just have to hit it once or twice to crack and the shell will be released easily. No heavy digging to get the shell off. The backyard reminds me of my childhood days. We had the ducks, turkeys and chickens/fowls all living peacefully together. Chickens and eggs from the backyard every week.

    Isn't it nice to have your family in your videos for a change?! I love the part where you were feeding the ducks with the coconut husk. When you were washing the chicken, flour was added, why? Batman can real cook! I would like to meet him one day! Very entertaining and informative video sweetie TFS!

    I'm Haitian and I love the way you guys cook!! All carribbean islands have there own touch but looking at your videos, Trinidadians and Haitians cooking style very similar. The green seasoning is a must for us, we call it apiece, which means spice sauce in Creole. It makes my heart smile that our cooking style is almost the same. We don't use curry much though but I do since my boyfriend Is Jamaican. I like to know how all islands cook their food so I can change it up sometimes and try something different.I just made the crab and dumplings that you and Batman did and I must say everyone Love it! Thanks for the videos : )

      +Oasisfullfilled At the end of the day, Caribbean cooking is heavily influenced by West Africa cooking. And in places like Guyana and Trinidad & Tobago you have a lot of South India cooking influence as well. In Latin American countries like Brazil, Colombia, and to a lesser extent Venezuela and Ecuador where there is a relatively large Black population you also find West Africa influence on the cooking. Even in the US, a lot of foods they cook in the South is influenced by West Africa.

    cheesecloth is better to strain the coconut in. keeps pulp out good. carrot juice same method.

    Thank GOD for blenders! I remember I had do the Greatting of the coconut! We had goats & chickens! There’s nothing better than a fresh killed chicken. Although I used to feel sorry for the goats or chicken when they were about to get kill... I could not watch!! NyC🇹🇹

      Thank you! It actually doesn't taste bad. He only used a little sugar to stew the chicken so it was very subtle.

    To make it easier, place the coconut in the hot oven for a few minutes at about 350 and the shell will come out easier. What you were doing was dangerous.
