MONKEY BREAD
3¾ cups (450 grams) all-purpose flour, plus more for dusting
½ cup (100 grams) granulated sugar
1 tablespoon (9 grams) instant yeast
2 teaspoons (12 grams) fine sea salt
1 cup (240 grams) whole milk
1 large egg (50 grams)
1 large egg yolk (17 grams)
10 tablespoons (141 grams) Unsalted Butter, cubed and softened
2 cups pecans
1 cup demerara sugar
Pinch salt
½ vanilla bean
1 tablespoon ground cinnamon
2 sticks butter → use to grease bundt pan

That made me smile too because it's certainly something I have done. I've apologized to inanimate objects I've stubbed my toe on. Funny how that's my instinctual response and not swearing: "Ow! Sorry, chest-of-drawers..." And yes, I'm indeed Canadian :P

My Hungarian mother made this, called Aranguluska. She served it with a vanilla sauce I’ve since learned was creme anglaise.
This looks so good, I want to make like a crossover between this and the Cardamom Maple Walnut buns.... tossing the dough balls in cardamom/orange zest/walnut/sugar mixture and then assembling the monkey bread from there. Ideal Christmas breakfast! Thanks Claire!

Claire, you are the BEST! My daughter and I are avid fans!! This is the only time I would dare to give YOU a tip! As a monkey bread”expert”, trust me when I say you can skip the shaping of the dough balls, dip the balls several at a time in the butter and then nut/sugar mixture. It will save time and effort and be just as delicious and beautiful! I have been making this every Christmas for 30 years! Thank you for making me a better baker and being so entertaining!
Same here. We never shape the dough. Just dip, coat and find a spot for it. :)

Also it says instant dry yeast here but the jelly donut brioche and the book both say active dry, which is what Claire says she usually uses.
The yeast is also different... I ended up following the videos quantities.
I have always made monkey bread with croissant scraps (I worked at a bakery) with a cinnamon/cardamom/butter/sugar schmear, but next time I’ll try them this way!!

I made this with the brioche recipe from dessert person and it was a massive hit over christmas. This was the first time I used a thermometer for cooking bread and it made a MASSIVE difference. The dough was perfect. 👌

Aranygaluska, yay! 😊 I'm Hungarian and it's one of my favourites ❤️ Over here traditionally you would have it with a vanilla sauce that sometimes even has sweet white wine added to it (wine chaudeau if I'm not mistaken) and it's pure walnuty sweet bready heaven on a dessert plate 😍⭐️

I like to take a bit of the melted butter mixed with the sugar mix and pour it over before the final rise. Gives it a beautiful sticky bun top when you turn it out

An old high school friend that taught me how to make monkey bread would grab the leftover butter and pour it over the unproofed balls and then dump on top the leftover cinnamon sugar. That extra sugar would make a sort of crust for the pieces that end up at the bottom once turned over and the extra butter made a sort of sauce that covered the whole thing at the end.

I made a batch of Claire’s brioche the other night. I let it rise and then put it in the fridge overnight. Yesterday I patted it out into 4 round layers with my favorite cinnamon roll filling. I shaped it into a twisted star, let it proof and baked it! Not only a huge hit but it came out beautifully!

Funny this showed up today. For breakfast today I had a similar monkey bread, but mine uses frozen dinner rolls and butterscotch pudding. :)

Love monkey bread but in Hungary it's usually served with custard which I think does alleviate the sweetness a bit. Wonder if the custard part is a fairly new thing or that did not migrate to the US 🤔
I think in America it's just more common to serve it with coffee. So the sweetness pairs with the bitterness.
As far as "arany galuska" goes, with the custard included, it's treated like a complete dish. They serve it at school cafeterias as the meal of the day, which is not the most healthy thing in the world, but watchagonnado. At home, on the other hand, I wouldn't feel the need to have anything along with it, but a nice cup of milk. Coffee is fine too.
And we also bake it like burger buns, l mean the small "slider" ones, placed closely, to let them rise and stick to each other. Helps with the proportions while serving.

I wonder if the butter used to dip the dough balls to make the sugar-nut mixture stick imparts enough flavor to make a noticeable change in the end result if you tried using either browned butter or ghee instead of standard butter?

Claire will you do a video on banana pudding? I live in TX and my parents live in AL. Our friends and family either bring or expect banana pudding at every potluck and BBQ and birthday party. A layered dessert with bananas and cookies and vanilla pudding - what's not to love right? The thing is that most folks make it with the instant pudding which tastes like fake vanilla and the texture is weird, and they always use non-dairy whipped topping and I think that stuff is nasty. Can you help us folks in TX and other southern states know how to make a better banana pudding?

I have one like hers that I got from the Food52 online shop. It’s the Five Two rolling pin and includes measuring marks as well as silicone rings that help roll dough to a set thickness. Love it.
If we wanted to make a nut-free version, what else could you use to balance the sweetness of the bread?

I would use Claire’s 1 cup raw or Demerara sugar, 1 tablespoons cinnamon, & if you want crunch, try Grape Nuts cereal, or bread crumbs - much less sweet.
curious: what would it look like if a dough did NOT pass the poke test? would it just not spring back? does that mean it needs to proof longer or it's proofed too long?
