Dark Souls Remastered: Great Club Overpowered Early (Strength Build)

This build uses the great club (a very strong strength weapon) and the power within pyromancy (boosts damage and stamina regen at the cost of losing hp over time).
You could do this guide with any strength weapon, really.

Using the great club as a one handed weapon works great too. That weapon owns the inside of the Ando Lordo castle. Which turns out to be a great place to grind souls and titanite chucks later on.

I went looking for new builds to try now that I'm going back to DS Remastered, and I found this beauty. I've done a caveman build (high strength, low intelligence and everything else) and a Pyro build, but I've never thought to combine them. This looks like a great way to break the game over my knee all over again. Thanks, Graphen_.

Yeah, Pyromancer/dex and Pyromancer/str is pretty nice. I don't remember, but some Int gives you extra elemental resistance too :)

If you like melee, try balder side sword and dex, it gets A rating in dex when upgraded to 14+. The moveset is insane, it has the speed of a rapier, and the range of a greatsword. It uses very little stamina, and the moveset is perfect for those narrow hallways, can stab 2-3 enemies at once. I finished the entire game with that.
