Mexican chiming in. We of course have made our own torts for generations, but my aunt showed me something really cool a few years ago. Add a handful of instant mashed potato flakes to your mix and you will end up with the most soft tortilla you've ever had.
Thanks for the tip! A lot of people are asking for substitutions for lard. I mentioned shortening, but do you know of any other subs? I prefer authentic with lard, myself, but not everyone does.
I've seen recipes with olive oil instead of lard. I'm not sure how it will turn out, but it may.
I have used vegetable oil when made without fresh flour though.
I used Ghee
@@GrainsandGrit, I am going to try this recipe with tallow. I think it would make a good substitute because it is similar, but it is rendered from beef.
Hello everyone! I made these tortillas the other day but ended up not having the same ingredients 😅, so if your like me and needing to substitute some things I'll tell you what I did. First off I don't have soft white wheat I have hard white wheat. So I grinded that up, I have a hand grinder not an electric so I always sift out the big pieces before using it. I mixed 2 and a half cups of sifted hard white wheat with the same amount of baking powder as she used, I didn't end up using all the water but I believe that's because instead of lard I used about 3 tablespoons of olive oil. I made sure to kneed the dough for 20 minutes! It's very important or it will just be stiff and crack when trying to roll. Hope this helps! ^^
Hi Felicia! I can't walt to try your recipe! I recomend a cast iron skillet or grill. Now that I'm trying to be healthier, I have gotten rid of all my non stick skillets
Thank you so much for this recipe. I made these yesterday and they were delicious 🥰. I just wanted to say, non stick pans probably shouldn’t be heated so high because they off gas at too high temps. My dry, cast iron skillet worked perfectly, no sticking 🥰
Long live cast iron!
My H.S. Spanish teacher used a 50/50 lard & butter mix. Could roll those tortillas tight enough to play darts with. Good times.
Thank you for this! My family LOVES them! Our son (that we're battling Autism/Vaccine Injury with) LOVES them as well. That is HUGE! We are excited to see how Jesus uses the fresh bread & nutrients in fresh bread to help right our son's (and really all of our family's) systems. So thankful! (Aside from biscuits, it's been bread fail after bread fail for the last 16 months). But this was a grand slam!! So thankful :) Thank you! NOTE: we used organic Tallow rather than lard (easier on our son's systems) - and they still came out AMAZING. So that is another option. Much love. God bless! All the best!
WONDERFUL!! That's awesome!
I’m making these today for chicken salad wraps this eeek for lunch. I don’t have lard so I’m using half bacon grease and half butter. I can’t wait to try them
Sounds great!
Thanks for the recipe Felicia!❤ I typically use a combination of hard and soft wheat to make tortillas, but they don’t turn out super pliable. So I’m going to try your recipe, minus the Lard (we don’t eat pork), maybe sub butter or shortening. :) Blessings to you and your family!
Yeah definitely use soft white wheat. And the longer the balls rest the softer they are. Shortening will work, I’ve never tried it with butter.
I was thinking butter lard and shorting sounds unhealthy @@GrainsandGrit
I make flour tortillas and use butter. I've used avocado oil before but I think they come out better with butter
@@jessicamares3580 nice, thanks so much! I imagine the butter flavor is delicious in tortillas. :)
@@jessicamares3580 softened or melted butter? 😊😊
Love your videos!
Thank you!
Have you ever tried making these ahead of time? Freezing them? Or freezing the dough balls?
I haven't, myself. But try it and report back for us.
Thank you, Felicia 😊. Tortillas are something I'm still wobbly on.
I had a hard time finding lard, but thanks to a note in Jill Winger's cookbook, I ordered some from Fatworks online. Excited to make tortillas tonight for Taco Tuesday. Thanks, Felicia!
There are usually tubs in the grocery stores next to all the oils. I usually pick mine up from Walmart.
I wait expectantly and excitedly for each new monthly recipe! Your Zojirushi bread and basic muffins are absolute staples in our house!
Going to try this with virgin coconut oil . Thanks for a good tutorial .
I would NOT use coconut oil with this. First of all, you will have a coconut taste and I also just don’t think they would turn out well. Feel free to try and let us know how it goes though!
Thank you I've been looking for a recipe that uses fresh soft wheat berries like this. Blessings
Thanks so much for this recipe!
I would love for you to do crescent rolls!!!
Thank you for this video Felicia! I recently purchased a mill and learning all I can. I have watched several of your videos and enjoyed them all. My wife and I made these tortillas for our "Taco Tuesday". Great recipe! I followed your instructions and rewarded with soft and delicious tortillas.
Oh good! Glad they worked for you. Nothing like fresh tortillas!
Oh my goodness 😍I love you Felicia THANK YOU
My pleasure! :-)
I've really been looking forward to this recipe (after your teaser). I've never purchased or used lard before. Time to go on the hunt for some. Thank you!
Lard is great for many things!!
Wow those look great. I have a Komo grain mill I will try these. The danish dough hook looks handy.
Hi Felicia. Always enjoy your videos. If I may make a request; barely breakfast meals would be interesting.
Thank you, this is right on time! I was just started looking for a tortilla recipe last night and was hoping you had one, but it was really late so I decided to wait to look…And poof there it is today. 😂 I love all your recipes! Thanks so much. God bless!
lol it’s fate!
Perfect timing; I’ve been thinking my way through homemade tortillas for a couple of weeks. Decided I would use my soft white wheat, but wasn’t sure about the fat. Thanks so much sharing this!
Great timing!
I tried these & let them sit in fridge for a day. Very hard balls. I did get to roll out some. We ate them but need to work on the dough consistency. Thanks for the video & recipe!
Excellent recipe. My wife prefers flour tortillas, but store bought are just junk. Thank you.
Thank you Felicia! They look great!
Thank you so much I’ve been waiting for my friend from Mexico it’s just hard to get together. Thanks again 🎉
I’m going try this recipe this weekend. My mom would make homemade tortillas for dinner all the time when we were kids (New Mexico style) ,but never made tortillas with freshly milled wheat berries. I can’t wait!
My husband wanted me to learn this. We were talking about it the other day. Whoop whoop ! 🎉 ❤
I loved the video!
Perfect timing!
Thank you! Excited to try this!!!
I appreciate you sharing your recipes. I have never milled my own grain. I’m very interested in the process. I’m hoping soon, I’ll be able to try it out.
The recipe looks great! Ty! Nonstick pans are really toxic😮cast iron is awesome for this😊
Did the cast iron work?
Hot, dry cast iron 😊
@Lady Ba, cast iron with a well-seasoned coating behaves just like nonstick.
I know for a fact cast iron is best. I used the other skillets before I went to Mexico. I will never use an unseasoned cast iron ever again. Makes the flavor perfect every time. Could use the cheapest flour too and that's the secret. Butter is always better too
If you wanted this for tostadas, would you just fry them in oil?
That would be with corn tortillas. Basically, you just let them go stale and fry them!
@@GrainsandGrit oh yeah duh I don’t know what I was thinking, yes, tostadas are corn lol
I really enjoy your channel! Thank you.❤
I have been making my own bread for years and grinding my own flour for 2 years.
Good for you! :-)
I will be making these. Great video!
In time for Passover! Thank you
I have just started dibbling with milling my flour (in a KitchenAid blender so far, works great). I have only hard red wheat berries at this time (tight budget), but want to make these tortillas! Can these be made with hard red wheat?
Not sure, but worth a try!
Did you find this recipe or is this something you experimented with. I don’t use lard so I will use tallow. Hopefully it will still work.
Oh this is definitely my finely tuned recipe!
Hi! Learned tons from you. Thank you for sharing your knowledge and experience! Question, have you tried making fresh milled naan or any flat bread, one without yeast and one with sourdough starter/discard?
So when you make these you don’t have to autolayse? Before lightly kneading…is that so gluten doesn’t develop?
Could you substitute tallow for lard?
do you ever use winter soft red wheat 🌾 🌾can you make a fideo on using it ?
Could you use butter instead of lard?
Can you substitute butter for lard?
Try it and let me know!
Sonora wheat makes very soft tortillas
Hi Felicia! Thank you for this recipe! I can’t wait to try it! Do you mind sharing where you purchase the lard? Thank you!
They sell it at the grocery store. It’s with the other oils.
What about using cast iron pan? Oil the pan? Use butter? Idk what would be best for not sticking.
No butter/oil, we're not frying.
Can I use tallow instead of lard? I am working on producing my own everything as much as possible and have no plans to raise pork.
I think it's worth a shot!
I made these and loved the taste and they rolled out great. But they didn’t bubble up when cooking. Any ideas what I may have done wrong? I used the correct measurements, hot water and used lard. My lard was cold, could that have been the reason?
They're tricky, but keep at it. With practice, you can get them to bubble. If the dough sits for at least half an hour, your ingredients shouldn't be too cold.
Mine bubble, but they were braking when folding. I used cold lard as well.
We didn't consume them all,so I placed them in a plastic bag and put them in the fridge. The next day they were very hard.😮
How can we keep in soft for days?
@@rtcredeemed521freeze instead. They are fine to leave out on the counter for a couple days.
Could your baking powder be expired?
Coconut oil works also and it doest make it tast like coconut
Thank you, tortillas turn out great first time making flour tortillas, my husband has an allergy to baking powder, is there a substitution I can use.😊
1/8 tsp baking soda plus 1/4 tsp cream of tarter
Does soft red wheat or spelt work?
Hello Felicia, I do not use pig products. Can I use butter in the tortillas instead of lard?
Possibly. I've never tried it, myself. Lard is the authentic and traditional method., but butter might be a suitable substitute. Maybe try it and let us know.
milling your own - very cool - but I hope you have a back up storeroom of already milled when we lose power and have to survive for who knows how long.
Haha, I have my manual mill just in case. I would never want to eat stale old flour.
@@GrainsandGrit Oh good
Hi Felicia, I made your tortillas for the first time the other night and they were quite disappointing. Here's some details about my situation and what I used to make them... Live in New Hampshire, Mockmill 200, Kitchen Aid stand mixer (don't have a Danish dough hook), soft white wheat, lard. The dough balls rested for 45 minutes and didn't relax. The texture was like working with corn tortillas. They just kept falling apart like there was not gluten. Flavor was great, but fell apart like corn tortillas. Do you have any recommendations for tweaking the recipe? I am determined to master this recipe. Thank you for all of your wonderful recipes and valuable content!!!
Hmmm I’ve never had them fall apart like that. Almost sounds like they dried out. Did you cover them with the plastic wrap while resting? Super important to make sure they stay well covered so as not to dry out.
@@GrainsandGrit I covered them with a dish towel. Dang! I will use the plastic wrap next time.
@@Whit_Lin I think the flour isn't listed correctly. I've been using milled grains for a couple years. Soft white flour is used for low gluten recipes, such as pancakes, muffins, biscuits, etc., anywhere you don't want gluten to activate, Hard white is used for yeast breads, flour tortillas (to get that elasticity), etc. You need that gluten in those recipes. Any time I've made tortillas, I've always used hard white.
My tortillas were really hard to roll out and just cracked! Does that mean they needed more water? Or kneading? Can I knead these in my Bosch?
So sorry you're having difficulty. I wish I could answer every question on here!! Are you in our exclusive membership group? I do troubleshoot one-on-one in there. You can learn more here: bit.ly/3ta2LTc
question. I was wondering if I can make these ahead and freeze them?
I wouldn't. They're so much better fresh.
I’ve read that you can freeze rolled out tortillas with parchment between them and then you wait for the dough to thaw before you wanna cook them. To cook then freeze and recook wouldn’t give you soft tortillas the next go around.
Mine came out like chips :( I’m going to have to try again. I think I cooked them too long.
Could I use beef tallow instead of lard?
Worth a try I suppose.
Can you make the dough and divide into the 10 balls, then could you roll them out and then store them in the refrigerator? My daughter gets fresh tortillas that haven't been cooked in the refrigerator section of the grocery. She pan cooks them as she needs them. She bought a package of 60 this last time. Let me know what you think, thanks.
You probably could but I would put wax paper or parchment paper in between each disk and make sure it’s in a plastic ziploc bag or something to keep it from drying out.
I would premake a bunch and freeze the dough instead. Pie dough always freezes well. I think the fridge dries them out. Thanks for the tip.
Hi Felicia! Do you think coconut oil would work well in this recipe, instead of the lard?
No, I definitely do not think that would work well at all. I would try butter long before coconut oil.
I have made them with oil before. Olive, sunflower, avocado oils all work great. About 1/3-1/2 cup.
I wonder is their is an alternative to lard. I eat pork but I eat more healthy fats. Could coconut oil be used?
Ew, no. Wouldn't be the same at all. Like I mentioned in the video, you can substitute shortening, but that tends to be GMO.
Yes you need to use cast-iron.
I just can't imagine using shortening or lard!!! Isn't that lard hydrogenated? Maybe grass fed butter might work.
Shortening is basically petrochemicals. But lard is a completely natural food and the traditional indigenous way to make these tortillas dating back hundreds of years.
Fine flour grind on the wondermill or regular bread grind?
All I have is hard red wheat, will it work
Just give it a try. It won't be quite the same, but it's worth a shot.
When is your April recipe going to be posted?
I’m way behind on it but I do plan to have it posted soon!!! I apologize for such a delay, but it’s coming and Mays will be soon!
Can i make tortillas with regular einkorn flour?
I do not eat pork or pork products. Are there other kinds of lard other than from pigs that could be used? Beef tallow?
Try it out and let me know how it works. Lard is the traditional way of preparing these. Not sure about alternatives.
Hmmm... I actually have some chicken fat and I think I'm going to try that! We do communion at home every sabbath and the "matzohs" I've been making are hard as a ROCK, so I'm going to see if we can't use these for that purpose as well. (For unleavened bread I just need something that won't break our teeth, LOL.) @@GrainsandGrit
Where do you source the lard? I know some at the grocery store can be hydrogenated!
Grocery store. I don’t use lard much at all so I’m ok compromising on it. I have made my own though and that’s the only time I have gotten lard without anything added to it.
Lard is fully hydrogenated, which is much healthier and doesn’t produce trans fats like partially hydrogenated fats. Also, they do not sell partially hydrogenated anything at the store anymore
Do these freeze and thaw well?
No
Anyone think you could make as a shell and bake it?
Dunno, but if you're into that sort of thing, I hear Taco Bell is the place. :-)
@@GrainsandGrit I made mine like you said and my husband ate his flat while I put mine in a taco bowl form and baked it, they came out great. By the way I hate Taco Bell ☺️
What can we use instead of lard 😬
As stated in video and recipe, shortening can be used instead of lard.
@@GrainsandGrit shortening is not healthy at all 😬
@Lady Ba I dont. That’s why I ask the community.
@Lady Ba great thank you! I want to try olive oil and see :)
How about bacon fat?
Leviticus 3:17
You had me at Biblical tortillas until you said unclean pig lard. 😔 I love your recipes, but Scripture is clear, no pork.
I choose to not eat pork. Grace in everything and toward everyone. Maybe we could use ghee in our recipe💜 Also beef tallow? Not sure what that is, but gotta be a way to utilize our freshly milled grains and not buy tortillas 😉
1 Corinthians 8:8
But food will not commend us to God; we are neither the worse if we do not eat, nor the better if we do eat.
Romans 14:20
Do not tear down the work of God for the sake of food. All things indeed are clean, but they are evil for the man who eats and gives offense.
Old Testament. Jesus fulfilled the law. In the New Testament, Jesus swept away these rules when He “declared all foods clean” (Mark 7:18-19): “There is nothing outside the man which can defile him if it goes into him; but the things which proceed out of the man are what defile the man.”
If you want to make amazing recipes and tortillas, go for it. My plea is simply calling something Biblical that goes directly against Scripture. Our Father does not change His mind. Our Messiah didn't eat pork. His disciples never ate pork. We won't be eating pork in forever after.
@@enigma___ Jesus did fulfill the Law. That means He did the Law and told His disciples to do the same and teach others to do the perfect instructions of God.
“Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them. For truly, I say to you, until heaven and earth pass away, not an iota, not a dot, will pass from the Law until all is accomplished. Therefore whoever relaxes one of the least of these commandments and teaches others to do the same will be called least in the kingdom of heaven, but whoever does them and teaches them will be called great in the kingdom of heaven.
Matthew 5:17-19 ESV
Lard is not biblical. 😬
Please no judaizing here.
@@GrainsandGrit Do you not follow Jesus? The whole Bible is for all believers. We are grafted in. 💜
Didn’t you say your channel is “Biblical?” Lard is not that. Pig lard is definitely not food and should not be eaten by believers! See Leviticus chapter 11. Yeshua/Jesus would not eat your tortillas (even though they’re soft and taste yummy) because He kept the food laws. And we’re supposed to walk like Him, right? I’m sorry.
You are talking about Old Testament law. Jesus said you are not unclean because of what goes into your mouth, but what comes out of it.
Just substitute veg shortening! We also keep the food laws but are not to argue about such things. Shalom!
@@donnaparks2181
I’m not arguing. I’m being a light and sharing His truth. Pork products are detrimental to our temples.

Please read the passage and the entire Bible in context. Yeshua would never put lard in His mouth and neither would Paul nor Peter. Please pray about it and ask Him about His food laws and also read Matthew chapter 5:17-19.
