How to make Indaad | ಇಂದಾದ್ | Authentic Mangalorean Pork Indaad | Pots and treats | Easter

    - Is a authentic Mangalorean dish with the influence of Portuguese cuisine on mangalorean cuisine.
    Basically Indad is served rich weddings as a special dish.
    - Here i have shown traditional recipe of Indaad which is very easy to make along with perfect authentic blend of sweet,sour and spicyness dancing on your tongue...
    Ingredients:
    For Marination:
    Pork 1 kg
    Turmeric Powder 1/2 tsp
    Pepper Powder 1 tsp
    Salt 1 tsp
    For Masala (to grind)
    Red Dry Chillies 10 (with seeds)
    Red dry chillies 5 ( without seeds)*
    Pepper corns 1/2 tsp
    Cloves 10
    Dates 5-6 or raisins 1 tbsp
    Cumin seeds 1 tsp
    Poppy seeds 1/2 tsp or cashewnuts 3
    Mustard seeds 1/2 tsp
    Cinnamon 4" piece
    Raw rice 1 tsp
    Garlic one pod
    Tamarind 1 small ball
    Vinegar 1 tbsp
    For the gravy:
    Onions 2 large
    Mint leaves 1 tsp chopped
    Salt, sugar and Vinegar to taste
    Method:
    1. Cut meat into thin slices and apply salt, turmeric powder and marinate for 4-5 hours or overnight.
    2. Fry these pieces until they turn slightly golden on both sides. Do not overly them, or else they may turn chewy.
    3. Dry roast all the spices in the list "to grind" except garlic, tamarind and Vinegar.
    4. Grind roasted spices along with garlic, Vinegar and tamarind to fine paste.
    5. Heat pork fat which was released while frying pork pieces and fry onions till slightly golden.
    6. Add ground masala and fry for 6-8 minutes on low flame.
    7. Add fried pork, salt, sugar and Vinegar to adjust the taste.
    8. At last add chopped mint.
    9. It's ready to serve now but tastes better the next day.
    10. Serve with idli, neerdosa or ghee rice.
