    I`m pretty sure bacon or pork belly is not fully cooked at 140-145 degrees,especially between the braids. Not good ThermoWorks.

      Bacon, like most pork products, is perfectly safe to eat at 145 degrees. The bacon on the outside of the braids achieved much higher temperatures which makes it crispy. The bacon inside the braids did not get crispy but it did reach a safe temperature and we can attest to the fact that it was delicious!

      @@thermapen I guess you like chewy flabby bacon and pork belly or shoulder,disgusting.145 degrees is safe but not good eats.
