- Welcome to day two of Thanksgiving Week on Home Movies, where we're sharing a new recipe video every day highlighting the different stars of our Thanksgiving Special menu. Today's recipe is for creamy, buttermilk potatoes. They're garlicky, tangy, a little lumpy on purpose because we love texture, and there's a whole stick of butter in them. Seriously my instant pot makes the best mashed potatoes. You barely have to do any mixing so they come out perfectly and stay hot with the instant pot. I add water heavy whipping cream and butter. It’s against what we are taught but I’m not lying sis!!
Salt pepper butter milk mixed with a hand mixer to smooth but NO purée.
my abuela's papas fritas con juevos with fresh bread and butter!! dipping the fries in the runny yolk is the best!!

I can't wait to try these potatoes! when I was a kid, having mashed potatoes w/ tons of butter and TONS of black pepper was my favorite after school meal; when I was too young to be trusted to boil water my parents kept instant mashed potato flakes in the house just so I could make mashed potatoes in the microwave. I used to eat these mashed potatoes on buttered toast as a sammy. Very carb redundant but I loved it

My daughter loves whipped potatoes. I prefer lumpy "rustic" potatoes
if you do reheat the left overs put them in the oven. They go crispy on top like shepherds pie
I think the best turkey soup is putting all leftovers in the pot including cranberry sauce, mashed potatoes, all but salad. It's so good!

How funny. I'm all alone, so turkey is MYWAY. The only reason I do the deed is coz I love turkey, and it's on sale. This year, I decided to take it easy on my fractured back, and anxiety level; I decided to make (and eat) one thing a day, only my favorites! And on any day I want. Cooked turkey yesterday. Today stuffing (with same mirepoix for everything, already cut up). Tomorrow I will finish stock, and make these taters, I hope. Et cetera. My "leftovers" will be Thanksgiving dinner! On Friday. Or Saturday. ❤️

When I was a youngster my Mother tried to pass off instant mash on and my Dad and me, ONCE. We begged for lumpy mashed potatoes from that day forward, to insure they were made from fresh potatoes. Texture continues to reign supreme.

Looks good! I've always added garlic cloves to my potatoes as they boil. Never simmered them in cream. Is there a big difference?

For Thanksgiving, you must have mashed because it is illegal to serve anything else on that day. My favorite would be a gratin with heavy cream, very thin sliced onions and Gruyere cheese! That is a great preparation to serve with the Christmas Prime Rib and Yorkshire Pudding. 🎉🍾🥂

Alison, I'm an old hat at mashed potatoes, but if I wanted to add sour cream instead of buttermilk, would you say like a half a cup of SC to the 1.5 cups of the heavy cream?

What happens if I leave the buttermilk out? How would it change the flavour ?
would be much less tangy/more one-note, but still creamy and delicious (just replace it with whole milk or regular heavy cream, or they’ll be too dry)

My ex boyfriend told me one time that texture in mashed potatoes made him gag. Looking back, I think this was the first red flag I ignored! I was raised with skin on, smashed/crushed mashed potatoes. My mom would sometimes do a silky purée but even then, I would beg for roasted garlic and chives and a lot of fresh cracked pepper. Silky potatoes are good but I feel like, IDK, they just disappear in your mouth? If I’m going to eat potatoes married to fat, I want to know it.

How would you make this a vegan recipe?
Not sure but I would think substituting puréed cashews (cashew cream!) or coconut milk would add the creamy fatty dimension that we want from cream/milk. For butter there is vegan butter but I’ve never used it…refined (nonsmelly) coconut oil has a similar saturated fat content and characteristics. A tablespoon of vinegar or lemon juice per cup of milk can can substitute for buttermilk
I'm making buttermilk from 4 cups unsweetened oat milk and 2 tablespoons of apple cider vinegar. Vegan block butter is good and I'm adding cooked scallions as I'm Irish. Loving the commitment to textured mash by Alison.
@@nima16042 There are a couple of brands that make a vegan heavy cream and I'm going to see if they have it at my local Whole Foods. I just can't find a commercial vegan buttermilk. I hate coconuts LOL. I do have some vegan butter. Crossing my fingers and hoping it goes well.
@@Crypticred This is my first attempt at a vegan Thanksgiving so I am nervous. I will try your measurements to make the buttermilk. I have the Miyoko's butter that comes in a tub but I might try to pick up the stick butter as I think it has a firmer texture. Thanks for the reply.

They have some dairy free “half and half” now that isn’t bas!
Miyokos Vegan butter and Westsoy Soy Milk. The butter is at trader joes and the milk can be found at whole foods.

@SkylerBouchard That's the point - mashed potatoes are a staple side at everyday meals. We make dishes that are special for Thanksgiving. We do not do such a common, easy and boring dish like mashed potatoes that are served routinely with basic dinners during a regular week. KFC serves mashed potatoes 24/7.
