    2 LBS Chuck Roast (or other cheaper cut of beef)
    4 TBS Gebhardt's Chili Powder
    2 Cloves Garlic
    4 TBS Flour
    4 TBS Vegetable Oil or Lard
    1 Large Onion, Chopped
    1 TBS Salt
    1 Quart Hot Water
    Cut meat into small chunks, do not grind. Mix raw meat with chili powder, garlic and flour. Melt fat in a large pot (or dutch oven) and saute onions until tender. Add the meat and cook 15 minutes. Add Salt. Pour hot water over meat and simmer one hour (first 30 minutes covered, 2nd 30 minutes uncovered), or until tender. You can definitely cook longer but not less.

    I love your little spoon rest it’s a perfect pink and it looked like a blue edge. Boy this looks really good, my granddaughter loves Chilli so I’ll have to makes this for her. What brand of pot is that? It looks really nice.

      Thank you Patricia! My spoon rest is actually modeled after a little mason jar, and my favorite color is pink! I used to make another chili all the time until I discovered this one and now it's all I make. Is my husband's absolute favorite and it is delicious. Sadly, my pots and pans are no longer being manufactured. They haven't been in years. But it was a brand called Magnalite. Not sure if you can find it out there anymore. But they've been with me for many, many years and I absolutely love them. Have a wonderful day! 🍸❤️

      YesterKitchen I remember that brand of cookware so many good things that used to be made that they stopped making, its such a shame. Those pots were made to last forever and they were made in the US if my memory serves me. I’ve bought All Clad pots and pans made in the US when my daughter spent $50,000 having her baby because I didn’t want any contamination after my daughter started having so many near fatal reactions to contaminates in things coming from China. She had near fatal anaphylactic shock three times to unknown things and she was 46 when she had her baby after giving up on ever getting married, she did it herself without a husband as a last chance. Of course a doctor helped with the in vitro and donor sperm. My granddaughter is 7 years old will be 8 in August and she has brought joy back to our house. I have two other grandchildren but a crazy ex daughter-in-law who won’t let me see them but that was another tragic story that I won’t go into. It’s sad because I loved those kids and I don’t think kids can have too much love.
      I looked for that chili powder on amazon and my goodness it’s pricey $9 for 3 ounces, I hope they sell it at the grocery store but I’ve never knew about it so I never saw it. I ordered three 1969 cookbooks off of amazon that I didn’t have one was Mexican cooking, another was oriental and a ground meat cookbook, that should be interesting. You would have loved my mother’s 50’s kitchen with the pink cabinets and chairs. We had a turquoise 1957 Chevy too then, I loved that car.

      @@patriciasmith7074 the chili powder is Nationwide, so hopefully you have it in your local market. If you can't find it, you can substitute out whatever Julie Patty you have. It may not have the exact same flavor, but it will be wonderful.
      And wow... I'm so sorry! I'm so happy that you have your almost 8 year old granddaughter! It's so hard to stay strong sometimes. And yes, I would have loved that car! 🍸❤️

    That recipe might have assumed you knew when to put the flour in but the flour goes in later with the chilli powder.
    •Salt&Pepper, garlic powder beef and let the beef come to room temperature. ▪︎Pan fry the beef in tallow only and plus lard or bacon or salt pork in small batches. remove beef set asside. •Add flour to kinda greasey pan and whip the flour chilli powder 50/50 bolth up to a toasty peanutbutter consistency. De-glaze pan with the onions and some fresh pressed garlic low heat and the cooked bacon and sweat the onions easily because its finechopped. No bacon or cooked salt pork, its fine OK just add more salt now and beef broth.
    This is the same step methods for all (the timing to add chilli&Flour) including Arizona chilli, Mexican Tamales and chilli paste its the same timing steps.
    Serve over some fritos and baked beef bones/marrow if you're feeling under the weather. Chilli is supposed to be a mega dose of vitamin C to make you feel good. If you don't have any beef broth use powderd Johnny's Au'Jus french dip to flavor it's not to salty.

    This is just what we need for this cold weather. New Braunfels?! What?! We love it there! We appreciate the bite-size pieces. Never occurred to us to use flour. No wonder our chili never thickens. Hahaha That chili looks so rich and delicious. We would want to evaporate some of that liquid too. Looks really good.

      LOL!!! Flour isn't a common ingredient in chili but it really works with this one! And since this is the first chili using chili powder, you can't say it's wrong, LOL!!!!! 💖🍸

      Maria and Nabol We just lost a dear friend who lived for years in New Braunfels and I had never heard of it before we met her. Her husband was career Army is there a base near there. Now you all are talking about that little town. She had us go there when my daughter had to go to San Antonio on business to find a bakery that she really liked and she raved about, we bought her a lot of bakery items and then overnight mailed them to her and oh my she was thrilled.

    Just found your channel. I usually make one of the recipes from the terlingua Texas chili cook-offs. I use Gebhart in one of the recipes. Good stuff for sure! Yours looks very delicious.

    This looks as simple as it gets.............i prefer beans but it is not mandatory. Created in 1896 it has to be good. I bet it was a big hit at the time. Thanks for sharing.
    PS: Oh this video is 4 years old. A 2 pound chuck roast today mid 2024 is about 24+ dollars.

    Awesome recipe! What a great story about William Gebhardt. It is so interesting that he fell in love with a cuisine that wasn't even his own in a new land, and then he used his creativity and ingenuity to make it easier for other to enjoy that cuisine. That sounds similar to what I am doing with Argentine food, haha--so I have someone to look up to now!
    Wow, I did not know that women were not allowed in the saloon.
    I have actually only had chili once in my life--lol--and I think it has ground beef and beans--but I would definitely try your chili. I can tell how much you like it and how passionate you are about it. Thank you so much for another great video recipe along with a history lesson!

      Hey Parnell! Isn't it a cool story? It's so interesting to me how necessity is truly the mother of invention. And to follow a new cuisine in a separate new country! Still so many new things to learn! LOL, you truly have someone to draw inspiration from but I am guessing you are inspiring people as well!!
      One chili??? Oh Parnell, it's time! :) And this is a great one to try. True texas chili but very simple recipe (most are quite complex) so it's a great one to try! I just made it again the other day! 💖🍸

    I would be very tempted to put a couple poblanos, bell peppers and maybe some jalapeno slices for a little extra texture and spice. And a can of Rotel tomatoes with chilis...

    My mom had an old Gephardt recipe book from the early 1900s. She also had a Mexene cookbook from the 20s. Mexene is still my favorite chili powder

    Jill I am always learning something new with your shows I love it. Gebhardt never heard of him love the history and he’s the first one to make chili powder and I think my favorite thing is the first one to open up a saloon in Texas love the old photos. And yes your chili looks amazing and taste delicious I am sure of that because you used the original chili powder. Fabulous show today

    I travel between Houston and San Antonio all the time - I will have to make a stop now and taste me some chili. :)
    Have you ever tried Cincinnati style chili? Skyline chili is a creation of its own that surely warrants an episode.

      I got into the elevator with the VP of my company (very large Fortune 500), who happen to also be from Ohio and as the doors shut he asked me what I did the previous weekend, I told him I had flown up to Cincinnati to see my mother, at which point being the man he was he raised his voice and asked “so did you have yourself a 3-way or a 5-way last weekend?” to which I responded “I’m a traditionalist sir I like having 3-ways”...the silence in the elevator was deafening so he looked around and said “we’re talking about chili not sure what the rest of you perverts are thinking about”. This man is still the vp of this very large corporation

      @@yesterkitchen Howdy Jill, just came across this one.
      This is definitely an authentic Texas Chili. (I used to judge CASI cookoffs on the Terlingua circuit. Told you I was a foodie!) I can tell you this on the authority of being a 7'th generation native Texan, who's roots go all the way back to the founding of the republic. as well as a life long chili head.
      However, it has long since been perfectly acceptable to add beans to one's bowl of red without anyone except the most die-hard purists looking down their nose. In N. Central Texas, the preferred beans are Ranch Style Chili Beans, made in Ft. Worth. Another dish you might want to look into was a Texas State Fair staple for well over 25 years. Shanghai Jimmy's original Texas Chili Rice.

    Wow! You really hit the "way back" button for this recipe! The chili looks gorgeous; so thick, rich and luxurious. The history regarding chili powder was all new information to us. Excellent food history lesson. We love, love, love your show!

    My favorite fat? That would be lard. Then butter, tallow, marrow, duck fat. Given I am more likely to use venison over beef, it's possible I would have to source fat from my butcher (because I'm always willing to taste-test the best, which is not found wrapped and packed by large packing plants) but, this would be phenomenal, and venison is beef, just the very lean wild relation to the store bought beef. However, if I chose to not add the beans to the meat, one of two things will happen. Either the boys will eat this over fried hot dogs, or they will dump it into a food service size can of red beans, and then dump it onto cornbread. Possibly both, and both at the same meal.

      LOL!!!!! Probably both!! You must be a phenomenal cook! Your cooking knowledge is so vast! I agree lard rocks, but I know most people won't try my dishes with lard. It has such a bad rap!       @@yesterkitchen I understand those who avoid lard, and pork, to adhere to a kosher diet. But different fats act different, and that difference can change the texture, not just the taste. Suet has a higher melting point than butter, and lard creates a different texture from butter in a pie crust. But a lot of people think it is all about taste. My cousin's daughter actually prefers the taste of oleo. I would personally spread bearing grease on my toast first. Either way, the bread's garbage, but, the poor girl will happily scarf down the whole dish of mashed potatoes at my house, thinking it must be because they're so fluffy that they're so good. Yup, that and the lard in the pie crust you're using to eat them with, sweetie.

    Made this tonight. Short review: DELICIOUS. The only change I made was adding two cartons of roughly chopped mushrooms, which I cooked down before throwing the onions in. Ate it with a big dollop of sour cream, diced green onions, and shredded cheese. Excited that I have more to eat all week!

      I'm assuming you're asking about the actual manufacturer of my cookware. What I use and love has not been made in years. The company was called Magnalite and they are just as perfect 30 years later as the day I got them. Wish they were still around, their product was amazing!

    We put beans in our chili and we live in Texas. Well, I’m the only one that was born here. The rest of my family is from Arkansas so 🤷🏻‍♀️ Definitely going to try this! I don’t have to substitute anything because of food allergies which makes my life easier, haha

    Recipe on Gebhearts Chile on back calls for cumin in it.

    Need a bigger pot, LOL. Yeap real chili as in no tomatoes or beans. This is a recipe I'd make in the crockpot. This would be great served over rice.

      I just made this for dinner last night! This is hands down my favorite chili. If you want to use your crock pot, be sure to brown your meat with the flour and chili powder first to sear in the flavor. You'll love it! 🍸❤️

    This was really interesting 😃 Women were always "not allowed" in all types of places back then. They really had to fight for everything! This does look good, The flour to thicken everything up is such a nice touch, I like mine with onions, tomato, and sour cream 🤤

    Whoa, Mr. Gerbhardt sure liked to play up the "soup" aspect of chili. This does seem like a good recipe, but I'd rather do about a 14oz can of tomato sauce and a can of water. A bit more flavor that way, and a pretty color, too! Still, you can't beat a classic chuck roast chili! Thanks, Jill!
