Rhubarb Upside Down Cake - Celebrating Rhubarb Season in Michigan!

- I've done a lot of rhubarb recipes on Cavalcade of Food over the years because I really enjoy the flavor. Here in Michigan, rhubarb harvest usually begins in early June, which makes it one of the first vegetables harvested each year. The rhubarb that grows in my yard is really tart, so this recipe creates a nice balance of the sweet and tart on top of an old-fashioned cake. Great served warm with vanilla ice cream or whipped cream!
Top:
3 cups rhubarb, chopped small
1 1/4 cups miniature marshmallows
10 maraschino cherries, cut in half
1/2 cup sugar
Cake:
1/2 cup butter, softened
1 cup sugar
1 egg, beaten
1 3/4 cups flour
1/4 tsp salt
1 tsp baking powder
1/2 cup milk
Preheat oven to 350 degrees.
Grease an 8x8 or 9x9 baking dish. Put down rhubarb in an even layer. Sprinkle marshmallows over rhubarb, then add the cherries, then sprinkle the 1/2 sugar over the top. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Add egg and combine. In a small bowl, combine flour, salt and baking powder. Combine dry mixture alternately with the milk to the creamed mixture until all is well blended. Batter will be on the thick side. Spread batter evenly over rhubarb mixture.
Bake in 350 degree oven for 50-60 minutes or until a toothpick inserted into the middle of cake comes out clean. Transfer to cooling rack. Allow cake to cool for 5-10 minutes. Run a knife around the edge of the cake to make sure it is loosened from the baking dish. Invert cake on to plate. Allow to cool before serving. Great served still slightly warm with vanilla ice cream or whipped cream.

My mom and dad always had a rhubarb patch next to their garden ever since I was a young girl, so many memories of sitting on our picnic table with a shot glass filled with sugar and dipping a peeled stalk of rhubarb into it at every bite, gosh it was so good. They still have their rhubarb patch, my dad will be 100 on July 5th, and my mom is 98. We are so blessed to still have them and we’re still eating rhubarb! Yummmmmm. My grandma was well known for her rhubarb custard pie. I wish I had a recipe for it!
Oh how I miss the michigan rhubarb season, going into the garden and snapping a stalk of rhubarb. I just made a rhubarb upside down cake last week! My plant is an heirloom from my great-grandmother's garden in Echo Minnesota- the roots have been divided and transplanted everywhere from Los Angeles to Chicago and now Seattle. Anyway, the cake is one of our favorite desserts and my dad will be getting one for Father's Day. I make mine with browned butter and brown sugar.

Thanks so much for this recipe. My husband and I both watched. We are from Pennsylvania and our Rhubarb is beautiful - and ready to harvest. I am making the cake for Father's Day. If you add yard and leaf clippings to your rhubarb in the fall, a nice big mound, it will grow twice as thick in the spring :)

My parents and grandparents always had a rhubarb patch and I remember my grandmother making jam and pies with it. I've never been able to bring myself to eat it though. Rhubarb is one of those plants that seems to non-verbally call out "how about a little fire, scarecrow!?" to me. Maybe it's the way the leaves look like skunk cabbage or burdock. I'm sure it's delicious and know I'm being an irrational idiot. lol

LOL - I wanted to show the full stem with the leaf for those unfamiliar. The leaf went in the compost pile!

I’ve not eaten a marshmallow in decades but this recipe is so unusual, my curiosity is piqued! I’m going to try it. 4 huge rhubarb plants live happily on the south side of my house in central MN. Normally I make rhubarb marmalade, strawberry-rhubarb jam and rhubarb crisp but will try your recipe this week. Your Corning ware baking dish is a gem! A friend of our family that lived in Nebraska used to make Rhubarb wine.
I was too young to try it but my parents said it was “different”.

Rhubarb Slush Recipe
8 cups cut up rhubarb
8 cups water
3 cups sugar
Cook until tender drain in a colander
Save the juice.
Add to the juice
1/2 cup lemon juice
1 package of strawberry jello
2 cups vodka
Freeze in gallon pail
I don't put the vodka in it... you can add it when you make a drink if you want
We like it mixed with ginger ale or Sprite.
Hi Greg! I figured that rhubarb is a common thing in Minnesota. It seems to be most popular in the northern parts of the country. You could use a yellow or white box cake mix, although it will probably make too much batter for an 8x8 pan. Those mixes are designed for a 9x13. Jiffy Mix used to make a small box cake mix that would make one layer or an 8x8, but I haven't seen those for a while - not sure if they still make them. That rhubarb slush recipe sounds delicious - perfect for a hot summer afternoon. I will try it both ways - with and without the vodka! LOL Thanks for the recipe, Greg!

Looks so good, we have to try this recipe. My best friend's Grandfather had gigantic rhubarb. We lived next to my husband's parents when we married and they had a nice bunch of rhubarb plants. Then my Father - in-law decided he should fertilize them and that more fertilizer would be better. Well, he managed to kill them. After that we had to buy rhubarb. Thank you for the recipe.

I just to say that Hand Mixer you used in this video, my grandmother used to have.
She had that same KitchenAid Hand Mixer from 1993 all the way up to 2003.
She has a modern 2019 KitchenAid 5 Speed Hand Mixer & so do I but I’m thinking about getting us both either a 7 Speed (corded or cordless) or a 9 Speed Hand Mixer.
But I miss that Vintage KitchenAid Hand Mixer & I wish I could find it again.

Bravo! Cake came out great! I love rhubarb. My grandparents grew it in their garden. My grandmother just boiled it with sugar, we called it rhubarb stew. Try this Kevin: peel the raw stalks and put salt on it. Sounds weird, that's what I thought too, but it tastes great. Tart and salty, great combo. Take care, say hello to your sister. Stay well. ❤😂

Found out as a kid, I am allergic to rhubarb. Can't even pick it. Ate strawberry-rhubarb jam once and immediately got sick and my tongue blistered. This dish looks good though

I like warm rhubarb pie with vanilla ice cream scoops on top. Perhaps an ice cream cake version of you recipe with vanilla ice cream layered into it.
Hi Mike - maybe if you cut the cake in half horizontally and took vanilla ice cream and layered it in between? Vanilla ice cream is perfect with this cake!
Remember in my college days, my roommate and I spying ignored rhubarb in a neighbor's yard. We decided to ask if we could cut it, and made rhubarb desserts w/ it (to be shared). Fun was had by all. P.S. Don't forget (although am sure you know) that rhubarb 'leaves' are toxic to both humans and animals. Although you'd have to eat quite a few to become ill, but still worth the warning.

1kg of rhubarb cutinto intobite-sizedd pieces
1 Tbsp of corn starch/ corn flour/ potato starch
150g of sugar
Crumble:
150g of butter (room temp)
55g of finely sliced almond
170g of sugar
300g of flour
pinch of sea salt flakes
BAKE: 180C-200C for 20-30 minutes
Vanilla sauce
300g of milk
188g cream
110g of vanilla flavoured sugar
5 egg yolks
1 tsp corn starch
One Christmas my brother and sister-in-law decided to have a typical English dinner. Roasted goose, potatoes, asparagus, rhubarb and mincemeat pie. What a disaster. It was really bad. I remember those horrible pies. I thought rhubarb was a berry. (Oh, and some sort of English pudding that had so much liqueur poured over the top even after it was flambe' or flamed, the smell was terrible, and the taste was in the same category.)
Do you have a recipe for a chocolate pound cake? That I can appreciate.
