Baking a Lime Chiffon Cake

  • We wanted to bring something green to a St. Patrick's Day brunch and I decided on making a lime chiffon cake. Chiffon cakes are a wonderful hybrid cake - the lightness of an angel's food cake with the richness of a sponge cake. I added some green food coloring to both the batter and the icing, which I normally wouldn't do, but this was in celebration of St. Patrick's Day and I wanted something green! Happy St. Patrick's Day!
    2 1/4 cups cake flour
    1 1/2 cups sugar
    3 tsp baking powder
    1 tsp salt
    1/2 cup vegetable oil
    5 egg yolks
    3/4 cup cold water
    1 TBSP lime zest
    2 tsp vanilla
    6-7 drops green food color
    1 cup egg whites (from 7-8 large eggs)
    1/2 tsp cream of tartar
    Separate the egg yolks from the whites. You'll want five yolks and a cup of egg whites. So you'll need to use 7-8 eggs total.
    Zest two limes. You should have more than the one tablespoon of zest needed for the batter. You will use the remaining zest for the icing. After zesting the limes you can juice them and save the juice for the icing.
    Pre-heat oven to 325 degrees. In a large bowl, stir together cake flour, sugar, baking powder and salt. Make a well in the center of the dry mixture and add the following ingredients in this order: oil, egg yolks, water, lime zest, vanilla, and food color. Stir until well combined and mixture is smooth. Set aside.
    In a large bowl, beat egg whites and cream of tartar until stiff peaks are formed. Slowly pour batter mixture over the beaten egg whites and gently fold in batter until well combined. Fold gently and just enough so that there are no white streaks in batter. Pour mixture into an ungreased 10-inch tube pan. Bake in oven for 70-75 minutes, or until top of cake springs back when gently pressed.
    Remove cake from oven and invert tube pan (I use a full wine bottle for this) and allow to cool completely before removing cake from tube pan. Once cake is removed from the pan you can prepare the icing.
    Juice of two limes
    Remaining lime zest
    1 1/2 - 2 cups powdered sugar
    2 drops green food color
    Combine all ingredients in a large bowl and stir so there are no clumps of powdered sugar. If you want a thicker icing, add more powdered sugar. Pour icing over top of cake covering top completely and let excess run down sides. Allow icing to set up and cake is ready to serve.

    At one point and time Chiffon cake were everywhere and was popular over time they went away it would be nice if they made a comeback

      Hi RugbyFootballer! The chiffon cake was very popular at one time. This is a cake that requires a bit of time and extra effort, and I think most people just don't want to go through all the steps anymore. When I go to a gathering and someone is bringing a cake, 9 times out of 10 it is in a 9x13 dish. Making cakes like this and layer cakes require more time than most people have these days. Thanks!

      I agree! Seems there were a lot of Chiffon cakes when I was a kid at family gatherings. Sadly, all those relatives that made those cakes have passed. I need to try to make them for my family and see how they fly.

    Oh my goodness, this looks incredible Kevin! Hi Mary-Ann, and thank you for operating the camera 😊🩷 (feel free to correct me if I spelled your name wrong).
    I am part Irish, but I agree- everyone is a bit Irish on St. Patrick's day! The green food coloring was fun. It's one of those things that anyone could certainly add a coloring of their choice for any occasion to their own cake.
    I'm sure the host of the party wouldn't dream of turning you away, even with a slice of cake missing. The missing slice ensures it was verified and confirmed to be a delicious cake!
    I saw the same Sunbeam Mixmaster stand mixer at a secondhand store a while back. Now I'm feeling tempted to go back this weekend to see if it's still there, and verify if it's in good condition. We'll see!

      Hi Fawn! It was a great cake and a hit at the party! Next time I'll use your line and tell them a missing piece insures it was inspected and tested before serving! If that Mixmaster at the thrift store is in good working order, it would be a nice piece of equipment for your kitchen! Sister's name is spelled Marianne! Thanks!

    My mom used to bang the beaters on the bowl to dislodge whatever was stuck to them.
    I must have eaten a fair amount of glass chips over the years.
    I still have her 1950’s Sunbeam Mixmaster.
    Both bowls have countless chips on the top edge.

    That looks so delicious. My family insists that I make a Pistachio Bundt cake every St Patrick's Day. It has a package of pistachio pudding added to a yellow cake mix and makes a nice green color. I'm thinking this would be nice for Easter, though.

    I was just looking through recipes for a good St Patrick’s day dessert and then saw that you were making this lovely chiffon cake! I’ve never made a chiffon cake but make angel food pretty often. The problem with angel food is all the leftover yolks. This chiffon cake solves some of that problem. I’m going to give it a try. Thank again Kevin for another great video!

    FYI just a tip…cake flour can be made at home by measuring out 1 cup of AP Flour …removing 2 Tablespoons of the flour and replacing it with 2 Tablespoons of cornstarch…. Obviously this needs to be done for each cup of flour needed …Or for 2 cups of Cake flour use 1/4 c cornstarch to 1 3/4 cups AP flour….. 😊 I don’t celebrate St. Patrick’s Day but I hope all that do, enjoys their day 😉

    Hello Kevin, we had a great St. Patrick’s day. I made beef roast cooked on Irish beer. Fried cabbage with bacon and onions and of course mash potatoes and gravy. I made a green pistachio cake. It was a fun time❤😊 I think next year I’m making your lime chiffon cake. It looks delicious🤍💚

    Looks delicious! I remember my mom used to make very large and glorious birthday cakes for my sisters and me, some of my earliest birthday memories is seeing that cake. But I don't know if it was a chiffon cake or a sponge cake. She used a tube pan and would place it on top of an inverted potato masher so it could cool. She used something that was called "7 minute frosting" It had a hard shell but was creamy and smooth underneath. I wish I could ask her about it... but she left us a few years ago. I will always remember those moist and airy cakes. I'd like to think they were chiffon.

      Hi Greg! What a nice memory of your mom and how special she made your birthdays with these wonderful cakes! If she baked the cakes in a tube pan and they were big cakes, I'm guessing these were a type of chiffon cake or angel food cake. The 7-minute frosting was popular and made using a double boiler on top of the stove and it needed to be beaten with a mixer for 7 minutes. It went on the cake warm and when it cooled it created a thin shell on the top but stayed soft underneath - a wonderful classic frosting and perfect for these kind of cakes! Thanks!!

    Really nice video. I'm sure I had a chiffon cake back in the day, only I never knew the mechanics of it all. I never knew about the cream of tarter as a stabilizer either.

    At least with the Kitchenaid's planetary mixing action, the beater attachment is guaranteed to move through the bowl. The beater orbits and rotates within the fixed bowl like the earth spinning around the sun.

      The Mix-Master turns the bowl, only you have to pull the knob on the side to turn the mixer over so the outside beater will cause the bowl to spin on it's own.

      Hi Mike - the mixing action of the KA mixer does an excellent job moving around the bowl. The one thing I notice more with the KA is that if it's not adjusted just right, ingredients at the very bottom of the bowl can be missed in the mixing process. Thanks!

      Hi destinysouza - I've never used guava so I can't say if the zest would be the same amount as using a lime. You can try it and see if you get enough of the guava flavor in the cake. Thanks!

      Hi Kathleen - I think that would work. Not sure how the acid in the orange juice might interact with the baking powder.
