    Howzit boet. Seeing you already have a nice bed of coals. Why not braai the oxtail to seal the juices and get some of that flavour from the fire instead of sealing them in the pot. Also it's far easier as sometimes the pot runs out of space and difficult to turn the meat to brown on all sides. Like your videos boet. Keep them coming. Have a lekker day!! Cheers Shane Pienaar

    Hi boet. I'm a South African Indian who loves potjies. I'm a bit surprised you didn't use more veggies like carrots and mushrooms. Is there any particular reason? I would appreciate any advice as I'm no expert.

      Great question. Personally I find veggies like carrots too sweet for this traditional oxtail. Carrots work great in the oxtail potjie with the white wine (my YT episode 3 on oxtails), since the sweetness of those veggies breaks the acidity of the wine beautifully. This traditional version is so super tasty and by having less veggies, the beautiful oxtail remains the big hero. Potatoes are of course always great and the green beans is a watery type veggie that help absorbs some of the fat. In some cases, less really is more and you can appreciate the food for what it truly is, like with this traditional version. But, how do they say, variety is the spice of life, so please do not hesitate to share your secrets with me too.
