Hello friends! Today I propose 2 delicious recipes based on aubergines and chicken.
RECIPE N1
Baked aubergines with chicken ragout and cheese is a simple and delicious dish, perfect for lunch or dinner. Very easy recipe and anyone can prepare it! Your family will love eggplant made this way! All you need are a few simple ingredients and very little preparation time! Ingredients:
- 3 aubergines
- 600 g (1 lb 7 oz) chicken fillet
- 2 shallots or 1 onion
- 300 ml (1 cup) of tomato puree
- 150 g (5 oz) of cheese
- Parsley
- Salt and pepper
- Olive oil
RECIPE N2
Eggplant with sweet and sour chicken is a really tasty second course that we can think of as a single dish. Chicken with aubergines has a very particular flavor given to it by the sweet and sour and intense flavor of the aubergines; very good even cold. Simple to prepare, it can be cooked in advance and reheated as needed. All you need are a few simple ingredients and very little time to prepare this delight!
Ingredients:
- 1 aubergine
- 500 g (1 lb) chicken breast
- 1 clove of garlic
- Spring onion
- 4 tablespoons of soy sauce
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of brown sugar
- 2 teaspoons of sesame
- Salt and pepper
