It's not that they can't (their scientists clearly do use it) but most won't. With only minimal effort, it's pretty easy to do rough estimate conversions. e.g. 1 kg is approximately 2.2 lbs so saying 1 kg is 2 lbs gets you in the ballpark.
The metric system isn't kilogrammes. Kilogrammes is a part of SI, the international unit standard, which contains Kilogrammes, metres, Ampere, Volt, Watt and many more units. SI is the system used in all scientific research and development, but Casey didn't finish college so it's not that weird that he doesn't know what a kilogramme is.

You make a good point. His camera (Canon 80D) did get an headphone port on it's upgrade. But I bet he doesn't want to carry even more equipment than he already does. Haha
He is still using the Canon 70D though (which does not have a heasphone jack), because he finds the 80D too unrealiable as he stated in a former video ;)
