Sardine Choka & Mom's Fried Bake

  • Today's video shares a simple, tasty recipe for sardine choka! It's a popular Trinbagonian snack and is usually served with sada roti, fried bake, hops bread, coconut bake, pot bake or Crix crackers, and a side of hot Trinbagonian chocolate tea.

    What you need for the recipe:
    3 cans of sardines (I used the one in water)
    Bird peppers & hot peppers (optional)
    Cilantro (optional) *celery leaves can also be used
    Chive (green onion or scallion)
    Bandhania, culantro, shadon beni or recao leaves
    1/2 of a medium onion
    2-4 cloves of garlic
    1 tablespoon of oil (for chunkaying)
    Salt & black pepper
    Lemon or lime can also be used to neutralize the "fishy" smell.
    Tip: I find that when I scrape the skin off and clean the inside, it's not very "fishy" so I don't use the lemon or lime.

    Thank you for sharing this. I didn't know about this method for cleaning and prepping sardine. I like sardines but the smell and pieces of bone are off-putting 🙊 lol!

      You're welcome. Preparation is key with sardines, and lemon or lime juice will help with the smell. 🙂

      Try adding a bit of hot sauce to the sardines. For some reason, it tastes more like shrimp to me, then.

    I will definitely try this because when I make sardine it's only with pepper, tomatoes and onion. Love the idea of chive, shadon beni and chunkay it. The only I will add to this is tomatoes. Great recipe!

    Enjoy it, there is most definitely no other choice! I buy them sardines too, and enjoy the tomato ones mashed on toast. It is not good to wash them down the sink, ha ha. Looks awesome and your Mum's fried bake, well, what can you say! xxx

    I love the way you cleaned your sardines! I too am very particular about cleaning sardines. I usually add a touch of lemon juice in my recipe. Thanks for sharing!

    I am the same way.. i have to clean my sardines... I make mine similar... I cook it with almost everything you added and with bakes.

    Thanks for sharing your videos.I don't scrape the skin off the sardines nor do I take out the middle bone because that is filled with calcium. I like to eat the soft bones. too :) Can you get Mom to show us how she needed the dough for the bakes please, and the ingredients she used. Thanks.

    What does Choka mean? I was born in Trinidad and just accepted the word Choka but never questioned the word/ meaning until I tried explaining to friends wherever I lived overseas - Brits, Aussies, Americans. They would ask what is Choka - had no answer.

      It is usually made using fire roasted vegetables that are mashed finely, but in this case the sardine is mashed and mixed with aromatics and hot oil
