Great tutorial. Question, how much frosting do you make? My problem is I always get to the 2nd coat after the crumb coat and I'm always short on frosting. When I do smbc, I do 1 cup butter and 4 egg whites with 1 cup sugar. (I think those are the ratios)
Hi Amy! Ahhh yes I totally feel you! I think it really depends on the recipe you're following and through experience knowing how much of that recipe you'll need. For my SMBC recipe, for a 6 inch 2 layer cake 1x the recipe is enough, but as soon as I add more layers or have a larger cake to ice, then I start increasing the recipe in half increments, so this cake I decorated was 3 layers and I used about 1.5x the recipe. I always make a little more than I think I'll need because it's so annoying having to make a whole batch again! Haha hope that makes sense :)

Hi there! So glad to hear you're enjoying the videos :D And nope they don't need to be frozen (all though frozen cakes can be easier to decorate), and it isn't a must to add sugar syrup, but I would recommend adding it if the cake isn't going to be eaten on the same day :)

MK your sponges look lovely, as does your SWBC. Did you use a double batch of butter cream? And what size are your sponges?

My frosting between cake layers starts leaking out. At the end I have less frosting between the layers and more outside. I always use your ganache recipe.
Hi Maryam! It sounds like your frosting isn't firm enough :) let the ganache firm up a little longer (you can pop it into the fridge for 30 mins to help with this) and then use it to frost the cake :)
How do I get smooth sharp edge at the bottom? I notice that whenever I try to smooth the bottom with my offset spatula, my whipped cream will become uneven, like mini ruffles. So i use a metal scraper to smoothen the whole side all round before using my offset spatula but the same uneven edges occur at the bottom again.....😭 can someone help me please?

I don't have a stand mixer i have a hand beater...so what can I use isted of paddle attachment...i also saw ur recipe for frosting n in That also u were using the paddle attachment to remove the air bubbles..so pls tell me the replacement

Im a beginner and i made american buttercream frosting recently, i stay in india in a pretty humid place, though its winter now. Anyway, my frosting stayed pretty well for 1 hour after decorating and taking it out of the fridge. But before decorating i kept the cream in the fridge because i thought i should, but when i took it out for decorating it started to sweat a little, so i whisked it a bit more and it become smooth and creamy again.

Hi there! You're most welcome too, I just didn't for this cake as it was just for home :) (I usually use simple syrup on cakes that aren't going to be eaten the same day) :)

I am a beginner baker and i baked a cake with american buttercream frosting recently. I had the same question in mind. Yes, the cake and cream becomes a little stiff if taken out of fridge and eaten immediately, kind of tastes like m eating ice cream too! But its very necessary to keep the cake in the fridge between decorating and after decorating to keep the design in shape, otherwise the hotness of the cake can melt the cream! So, when i want to serve myself or others the cake, i take it out half an hour or hour before, and then serve 😊

How do I get my buttercream not to taste like butter 😢 help?
Make sure you are using fresh and real butter. Not any of the substitutes or artificial butters. If your butter is fresh and real it will have a delicious taste..but If you don't store it properly it can start to taste stale and it can start to take on a weird taste. Don't forget you can add flavoring to the icing. Some of my favorite buttercream icings are only butter, confectioners sugar and cocoa powder or vanilla bean or almond flavoring (you can use flavoring extracts or emulsions)... Add as much flavoring as you desire...just a little at a time so it doesn't overpower the icing.
