Entity of Sin Fish and shellfish can only be compared to a rare fillet of beef for me. And that beef is obviously expensive. Fish gives you a lot of yummyness for you money.
I would also think demographically speaking, the cost of beef vs seafood will definitely vary. Seasonal as well. Wild caught Alaskan Silverbrite will run me about $8.99/lb (uber crispy skin, mmmmm).. I can get a wonderful prime rib for the same price - when it's winter time (I live in New Hampshire). Summer time, the wild caught seafood brings us some very reasonable prices. Beef tends to be all over the place when it comes to prices during the summer months.
Ive often thought about saving the money and going to our local butcher to purchase half a clean/prepped cow (same for pig as well)... the savings are remarkable!

I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.

i think you can freeze any stock. not a bad idea.
***** Yes - fish stock can be frozen if you have no plans on using it immediately. I will often fill a stock pot with all of the seafood scraps, bones, heads, tails, etc, fresh herbs, mirepoix and let it slowly simmer for the most succulent stock possible. It gets drained, and then poured off into quart-sized freezable containers to cool before putting away in the chest freezer.
Normally I will not put the salmon skin in the stock though... I will cook that with salt, black pepper and garlic and cook it up in the oven, nice and crispy and snack on it! Wash it down with a frosty mug of beer! MMMMMM
You can also deep-fry the skin too! Just as it comes out of the fryer, and as it's placed on a paper towel to drain the excess oil - sprinkle any seasonings you like... and get your crunch on!
Ultra Window I wouldnt freeze seafood stock longer than four to six weeks... I only do enough bulk for pre-planning meals... My daughter LOVES my homemade Seafood Portofino and I love using the seafood stock for ultimate flavor!
This is my take on fish skin, feel free to add, omit, or modify,
slice into serving size, pan fry the skin with some salt and pepper until crispy (or flour/batter too if you want it)
a. serve as it is for some drinking snack
b. use it to garnish other fish dish
or pan fry it till crispy, cut it finely with kitchen scissor.
a. sprinkle on top of salad for an extra kick
b. add crushed nori, shaved katsuobushi, and other finely crushed crispy ingredients into "furikake", served over rice.
c. Like it wet and moist? mix shoyu, mirin, sake in a bowl, dip the skin, skewer it. then roast it in charcoal or other indirect heat for awhile until the surface glisten for fish take of "kawa yakitori"
d. make it into ingredient for fried rice

Salmon has fast become one of my favorite things to eat. So healthy and delicious...particularly smoked salmon!

No, Salmon are known to bash against many things. also that's just Gordon using the weight of the salmon to let it down. Salmon and Tuna are pretty bulky fish.

Tell your wife to watch it with you. Skin on a fatty fish like salmon can be crisped up in a pan for a snack or accompaniment. Or feed it to the cat
