That’s the awesome thing about the Bible. God uses His story to communicate Himself to every tribe, tongue, and nation, knowing that every people group can understand Him through the help of His Spirit. We find artwork from Scripture in so many different cultures because God wrote His story for every culture.

Historically, when people made pictures of the Bible, they would reflect the local culture of the artist, which is why Europe has white Jesus, Ethiopian churches have black icons, etc.

Modern jews and modern middle eastern people are much different and much more mixed and less diverse than during the first century.
Most jews in jerusalem were actually edomites that got assimilated After the maccabeans revolt, they were an ennemy of the israelites and some believe it is also what jesus refers to when he says they are not sons of Abraham. My understanding is that because Christ took on the whole of humanity, he encompasses every single aspect of us (what has not been assumed has not been saved, in the language of the Fathers). While Jesus of Nazareth as a man was a certain ethnicity, spoke a certain language, etc, Christ embodies Man as such. That's why you get a very European-looking Jesus in Western art, and an African-looking Jesus and Mary in Ethiopian Orthodoxy, and so on. There's a long history of people doing this.
