Nakhon Sawan (นครสวรรค์) is a city and province in Central Thailand. Although my wife is originally from Krabi in the South of Thailand (where her father is from), her mother is originally from Nakhon Sawan. So we decided to take a quick family trip to Nakhon Sawan (นครสวรรค์) to visit her grandmother and to eat some crazy spicy Thai food!
The last time I went to visit, my wife’s uncle had caught some field rats - these are not city rats, but free range field rats, which are very common to eat. He made an amazing Thai food dish of minced rat with chili paste and lots of extra chilies and garlic. On this visit to Nakhon Sawan (นครสวรรค์) I asked if we could eat rat again, but unfortunately they couldn't get any from the field this time… so we settled for some quail, cooked rat style!
The recipe for this spicy Thai food dish included these ingredients:
Quail (นกกระทา nok krata)
Curry paste (เครื่องแกงเผ็ด kreung gaeng ped)
Coriander seeds (เม็ดผักชี med pakshe)
Fish sauce - น้ำปลา (nam pla)
Holy basil (กระเพรา kraprao)
Chilies - (พริก prik)
Garlic - (กระเทียม gratiem)
This dish in Thai is called nok krata pad ped (นกกระทาผัดเผ็ด), which is quail stir fried with lots of chili.
I love the countryside of Thailand, especially the Thai food culture and eating interesting and bizarre and crazy spicy foods is also awesome.
Thank you for watching this Thai countryside food video about spicy quail!

People who are complaining about the rats are just so ignorant. He did say FIELD RATS, not sewers rats or urban rats. Field rats don't have the parasites and diseases that urban rats have.
Thanks Tan, they are delicious!
tan weekiat well said. Bush/field rats are good.
We eat bush rats in Nigeria too. So delicious. They are basically wild game lol
That's true. We eat Field Rats in our country too and they are DELICIOUS!!!!
Andrew Zimmeran tried field rats when he visited Thailand and they lived on a diet purely of rice and water. To be honest the way he cooked them they looked delicious lol.
Incredible family cooking recipe. I started feel what Mark experienced in the video. He brought in his baby son, the cute puppy and family farmland. That all made me feel like I was there with Mark and his family. Thanks Mark for sharing.
I'm not sure if you'll ever read this, but I stumbled across your videos by chance.
Initially, I thought your cheerfulness and demeanor was forced and painfully corny. But as I've watched more and more of your videos, your insatiable love for food and your positive attitude is infectious. Mark Wiens, you've truly won me over and I wish you all the best in this new year!
I love how you've immersed yourself into the Thai culture and way of life. Your relationship with your in laws is absolutely envious and admirable.
Do a video with "Ying does your voiceover". Or Make Ying a host for one video.
Kashyap Tank I'd like to see that video too
Thing is, she doesnt know english too well. so sadly i believe that couldnt work.
I'd even like to hear it in Thai with subtitles
she does have her own channel.... which has I believe 3 videos of her sampling food but its in thai
"Cooking with Ying"
Wow, that place looked so beautiful. Such an authentic meal! Looked delicious.
Thanks!

every time Mark gets to eat something new or delicious, it feels like Christmas Day for him 😅
Love the surreal 4k quality! It is dreary, damp and cold here in the Northeast US, so it's really refreshing seeing all those vibrant tropical hues. Enjoyed watching Ying's relatives prepare and cook everything. The quail dish looked mouth wateringly delicious! Thai people really know good food!
Sir Mark, I need your metabolism and your tolerance to spicy foods. 😳
jgty

Farm to table. That's what I love about country life. I miss going to my grandma's place in Palawan. Your video reminded me of that.
Finally! A video with Micah in it! :) He's so lovable! I missed these Thailand videos. I hope you go back to uploading shorter videos every once in a while. :)
Mark, my mother binge watches ur videos everyday, and even watches them while Facetiming me lol! All she talks about now is Thai cooking and so she has been actively trying to recreate Thai recipes. Our family movie nights have turned into a marathon of just watching your videos haha. Much love to your family!
Every bite in every video he makes is the same reaction. Takes a bite, eyes widen, smiles and heavy breathing LOL
jason m Not true. Watch more.
when he doesnt make that face, it's probably cause it's not very good lol
and thats one of the best parts about his videos :)
I love watching his same reaction to everything. It never gets old. LOVE IT!!!!
Yeah....... and repeat lol
you got an awesome supportive fam ,great vids mark
Wow nice video Mark, really brought back some memories. My wife's brother has a small jackfruit farm about 30 miles outside Saigon in Vietnam. I hope you love and enjoy your family for a very long time.
how blessed you are Mark...Good for you and your lovely family.....all the best...and MORE CHILIS please!
Mark Weins. Loves Thai food so much, he married a Thai girl, just so he could visit her family and eat truly authentic Thai food. LOL
J/K
Keep up the great videos!
You ate... field rats 😱
I'd like to try that chili quail, looks delicious!
And Micah looks healthy. So cute.
Can't wait for a field rat meal episode.
😆
You are sick and disgusting.
@@eugeniasyro7315 . You're very negative person
I'm so glad to view the personal side of you and for you to share with us a little part of Ying's Family....now, how about you sharing your side of the family...love to see baby Micha, can't wait to see all three of you traveling and sharing with us many more food videos...blessings to all.
I love this, shows the authenticity of Thailand and it really makes me miss where I grew up, tough living in the UK and growing up in rural Thailand as I miss the food and everything so much!
I already had dinner but now you make me hungry again ka K'Mark! น้อง Micah น่ารักมากกๆๆ
Mark when do we get to see the side of your family... that would be awsome
We enjoyed the around the world trip but its was so great to see you back in your element in Thailand. You bring such a unique educational element to your videos about Thai food and Thai culture. Plus, even though the 4K brings new clarity to your images, those awesome shots would be excellent at 1080p or even 720p.
YES...more of this style of video's , how to cook ! Thank you
How cool it must be to live in Thailand.
I began to salivate watching the cousin cook the quail! Fantastic video! I felt like I was hanging out with you guys. The country side looks beautiful-reminds me a bit of my southern upbringing. More exploring the countryside, please.
This is what my food dreams are made of!!! Looks so good!!
This reminds me so much of my trip to Cambodia. My favorite part was being in the countryside and seeing how they live.
i like ur videos toooooo much lv frm pakistan
Mark got a new car !! Now we can expect more countryside Thai food !!

Hehe, I wanted to on this trip... but uncle couldn't catch any rats this time!
I love videos where you cook and hang out with Ying's family, great vibes!

u r so lucky mark . nd sach a inspiration for us
Thanks Sandeep!
Best CZcamsr ever, by the way you should go to Kerala in India
How simply, joyful and peaceful!
I absolutely LOVED everything about this video. Please make more videos of your family interaction - especially with Micah. He's adorable. I would love to meet your immediate family as well.
Did anyone else cringe when Ying's mother was chopping the quail near her fingers?
Yes I cringed, but not because the knife was close to her fingers, but because she reduced those potentially delicious looking quail to anonymous mounds of random bone flecked protein. Not really honoring the ingredients at all in my opinion, might just as well have been a pile of nondescript gristly ground hamburger. Just my opinion
@@nicolasrossi5978 There are normally 2 ways to prepare meat. 'ชิ้น' Slices? or 'สับ' / Chopped. Totally depending on your preferences. Both give a great, but different, texture.
Great content. I'm loving all your videos. 👍🏽👊🏽🇹🇹
Thanks!
MO GAINS Oh no rats for me
Hi Mark, really liked the shift to a family style video here. You should do more like this! Brilliant work as usual.
Micah..... Hooooooo☺️😱❤️ such an daddy boy
How blessed Micah going to travel the world.
*Triple Thumbs Up Mark, Ying & Baby Micah...♥*
Thanks Ralphie!
it's amazing by looking but what about the bones
I just love your Smile, Mark !
It's full of life. I feel very positive whenever I see your videos, buddy. God bless you and your family .
True, the countryside is a place I love, too. Clean air, peaceful plus the organic fruits and vegetables.
Your inlaws are so nice :)
maikor3 I was thinking the same. How giving and sweet they all seem.
Please Star Alliance provide this man, and ying with another 40 day travel
aww! I love when he shows his baby off, soo freaking cute!

+Mark Wiens❤❤
โคตรน่ากินเลยครับ ผัดแห้งๆๆเผ็ดๆๆนะ ข้าวร้อนๆๆ ลืมไม่ลงเลยทีเดียว
I eat a lot of spicy fried rice, hot and dry, so I would say do not do it.🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋🙋
Mark, you are the best CZcamsr out there. My children love you so much. Only thing is, you hardly show eating vegetarian food. The world is moving towards vegetarian slowly...
I don't know why but I love these videos better than your travel ones. Family is where it's at! Thanks Bro, and good lookin kid ya got there!!
I love ur vids but why do you look so excited in all of your vids? Grtzz

No, I SAW HIM FIRST
Mark needs his own show on the travel channel. End of story!
More Thai recipes like this would be great Mark! Looking forward to what you show us next!
Beautiful man!! Take in the natural life.
America couldn't give you this kind natural life!
Make me want to spend time back home in Ghana too!
Being a country girl we do have this type of life in America. My Grandparents lived deep in the country in Alabama. They raised their own produce, hunted, and lived off the land. This type of life is all over the planet.
Ebony Arnold I stand corrected then!!
I'm not from America, it's good to hear people still live like that!
Very cool, I'd love to visit Ghana!
Exactly i partly grew up in South Carolina and country living is the way of life. The hunting, fishing, gardening, quiet simple life style. We ate raccoon, squirrel, bear, turtles, gator, etc..etc.
Mark, have your parents met lil Micah yet? Wondering how often you get to see them?
Nothing like eating with family, I know Grandma and Aunties are enjoying baby Micah. It is overcast and cold here (WV USA), I am so glad to see the sun and green growing things!
Very peaceful and calm in that rural setting - good for Micah to get out in the countryside. What a great family environment you guys have! Love the videos Mark - keep them coming!
Come to Bangladesh man. All cost is on me ! Except your plane fair of course 😀
sure. But only for the owner of this channel :D. Besides you won't be living in hotels. Rather, in my place ( when you are in the capital ). For the rest of the places, hotel doesn't cost much when you are with local people. However, seeing a english speaking person, they will definitely hike up the prices :D
Sorry no rat for me still love your Vids!
Mark you are living the ultimate food dream and this is proof of it! Love
Congratulations! The food is so tasty
that quail looked delicious...hell I'd even try the rat !!!!very good video!
Le Anna Nelson 4:25. They gone eat him. Jk. Im asian, i can say this.
did you say fish? here cat comes lol
Awesome video Mark, as always! Great to see Micah again, he is getting so big!! I love your videos and constantly tell people to subscribe and support your efforts. Thanks for showing us all of the amazing foods and spices of your world, your channel is one of my absolute favorites.
Field rats...get some cats?
That dog was so cute! And I'm glad you are introducing us to more authentic Thai food.
interesting u commented why u were eating directly from the serving bowl. even though the family told u to go for it, and later u used ur spoon rather than a separate serving spoon. it looked bad especially if u will be sharing that with elders... it's kinda like saying "I ate the way that was most convenient for me now that I am full whoever wants to eat what I couldn't finish can have it, by the way I'm sorry if some of the residues from my spoon got mixed into the dish". it would have looked a lot less awkward if you had tasted it while it was still in the wok. I bet if u were a young Thai kid they would have scolded at u. it shows they have a lot of care and respect for u.
Rats? Doesn't rats carry diseases? Rats?
1981cherokee1 Apparently they are nothing like rats in Europe or the states that eat garbage and carrier disease. Field rats eat only vegtable roots such as rice. A delicacy in Thailand esp in rurual farmlands
Flip Nation a rat is a rat.
tthesweetestsinn Totally agree with you. Cherokee obviously has no respect for others tradition and or culture.
Flip Nation I asked a question and you answered. I concluded that a rat is a rat. You now accuse me of disrespecting a culture. How did I? What did I write to disrespect Thailand? While you go back and look at what I wrote tell me this, in rural farmland there are No garbage and sewage?
I love going back to Thailand as well in Surin mark. All my relatives on my Grandpa's big farm grow all types of produce. Nothing is better than home country Thai food😋🇨🇷👍
One of my favourite vlogs! :) Thank you for bringing us along on ur food travels!
Rats?? Do they the eat cats and dogs too then?
and pigs
when he says rat. hes not talking bout sewer rats or the dirty rats. they are field rats. they are actually clean, the rats eats veggies and rice
I don't eat cat or rats, but dog taste good.
Jennifer Ruan my friend said they taste sweet.... Not sure if it's true 😅
Stereotypical much?
I'm guessing rat would taste like.....
rat?... maybe
the loveable muslim weirdo Nope....chicken lol
the loveable muslim weirdo it taste like rodent..rabbit is the closest I can compare to
the loveable muslim weirdo 🐷 and 🐭 are in the same species.
The Leviticus Diet uhhhh, i dont think so 😬
Life and foods in the countryside it's priceless, this brings back good old memories!!!
I'm from countryside of Thailand and this video make me miss Thailand. such a nostalgic feel. thank you Mark!
