matcha mochi cookies ♡ もち抹茶クッキー

  • To make the mochi:
    - 1/2 cup glutinous rice flour
    - 1 tbsp cornstarch
    - 1/2 tbsp sugar
    - 1 cup milk
    - 1 tbsp butter
    - Mix the glutinous rice flour, cornstarch, sugar + milk together in a bowl and seal with plastic wrap on top. Poke holes into the top of the wrap for ventilation. Microwave in 30-second intervals until the mocha is cooked, making sure to stir the mixture in between.
    - Add in 1 tbsp butter to the mochi and fold in with a spatula.
    - Seal the mochi with cling wrap and make sure to wrap the dough. Chill for 30 min to an hour.
    To make the cookies:
    - 1 1/2 cups all-purpose flour
    - 1 tbsp matcha green tea powder
    - 3 tbsp white sugar
    - 1/4 cup brown sugar
    - 3 tbsp coconut oil+3 tbsp unsalted butter, room temperature
    - 1 egg
    - 1/2 tbsp vanilla extract
    - 1/2 tsp salt
    - 1/4 tsp baking soda
    - White and dark chocolate chips
    - Cream the butter and egg in a bowl using an electric mixer.
    - Add the white sugar and mix well.
    - Add the brown sugar and beat until combined.
    - In a separate bowl, combine the flour and matcha green tea powder. Add to the sugar mixture and combine.
    - Add the vanilla extract, salt, and baking soda and mix until fully combined.
    To assemble the cookies:
    - Take some of the cookie mixture and flatten it out. Place a ball of mochi inside, bringing the edges over until the mochi is completely covered by cookie batter.
    - Press in white and dark chocolate chips into the cookies.
    - Bake at 350 degrees for 10-13 min

    If i dont have microwave, what can i use to make the mochi?

      I believe you can steam it using a stovetop as well, but I've never tried it! :(

      hi! here are some rough measurements. ingredients like sugar and the matcha powder can be adjusted to taste :)
      mochi:
      - 64 grams glutinous rice flour
      - 8 grams cornstarch
      - 6 grams sugar
      - 240 grams milk
      - 14 grams butter
      matcha cookies:
      - 188 grams all-purpose flour
      - 8 grams matcha green tea powder
      - 38 grams white sugar
      - 55 grams brown sugar
      - 43 grams coconut oil + 43 grams unsalted butter, room temperature
      - 1 egg
      - 7 grams vanilla extract
      - 3 grams salt
      - 2 grams baking soda
      - White and dark chocolate chips
