  • I made 5 kinds of onigiris with some popular fillings that you can try!
    Onigiri has been the best Japanese soul food over the hundreds of years.
    It’s convenient, easy to make, has variety of choices and so tasty.
    Recipe and some tips for making good onigiri are below🍙
    I’m planning to make onigiri videos with other fillings like vegetables only and traditional ones. Tell me what you wanna watch!

    □RECIPES
    [ingredients] (5 rice balls)
    - 500g cooked rice
    - salt
    - nori seaweed (to taste)
    - water (for moisting your hands)
    [TIPS for Making Good Onigiri]
    -ABOUT RICE
    1. I use DONABE which is a traditional clay pot because it can cook rice moister and flavorful than cooking in a rice cooker. Of course, you can use your rice cooker or a normal pot which has a lid, too.
    2. Rice for onigiri should be Japanese short grain rice known as sushi rice and is cooked a bit firm, not gooey.
    3. Make onigiri with freshly cooked rice. If you try to make onigiri with cold rice, it’s not gonna be what you want. It falls apart quite easily.
    -ABOUT FORMING
    Do not form rice balls to hard. You never want a tough onigiri. Onigiri should be flakey when you eat.
    -ABOUT SALT
    Coat “generous” amount of salt around rice balls if you have more than 1 hour until you eat. I mean a little bit more than you think. If you eat onigiri right away, you don’t need to put too much salt.
    -ABOUT FILLINGS
    1. Fillings should not be watery. If the filling is too watery, the rice absorb all moisture from the fillings, and it’s not gonna be good.
    2. Fillings need to be a bit briny considering the balance of a whole onigiri.
    □RECIPES of FILLINGS
    ① Grilled Salmon
    [ingredients] (4 rice balls)
    - 100g unsalted salmon
    - 1 tsp salt
    [instruction]
    1. Put salt around salmon
    2. Grill them and flake it. If it tasted too blend, you can add some soy sauce or salt.
    ② Tuna Mayo
    [ingredients] (4 rice balls)
    - 1 canned oiled tuna (70g)
    - 1.5 tbsp mayonnaise (I use kewpie mayonnaise)
    - 1.5 tsp soy sauce
    - salt (to taste)
    [instruction]
    1. Remove excess oil from tuna
    2. Mix all the ingredients together.
    ③ Crab Stick Mayo
    [ingredients] (4 rice balls)
    - 4 crab sticks
    - 1.5 tbsp mayonnaise
    - 1 tbsp soy sauce
    - 1/2 tsp Japanese mustard (or dijon)
    [instruction]
    1. Remove excess moisture from crab sticks and flake them into strings.
    2. Mix all the ingredients together.
    ④ Marinated Beef “Yakiniku” 
    [ingredients] (4 rice balls)
    - 100g sliced beef
    - 1.5 tbsp soy sauce
    - 1.5 tbsp mirin
    - 1 tsp white sesame seeds
    - 1 tbsp vegetable oil (for stir frying)
    [instruction]
    1. Marinate beef with soy sauce and mirin for over 10 mins.
    2. Stir fry the marinade on a pan with vegetable oil.
    3. Add sesame seeds in the end
    ⑤ Shrimp Tempura “Tenmusu”
    [ingredients] (4 rice balls)
    - 4 raw shrimps
    - flour (for coating shrimps)
    - vegetable oil (for deep frying)
    - Tempura batter (※1)
     ・ 1/2 egg 
     ・ 1/3 cup water
     ・ 1&1/4 cups flour
    - Dashi based soy sauce “Tentsuyu” (※2)
     ・ 2 tbsp dashi stock
     ・ 1/2 tbsp soy sauce
     ・ 1/2 tsp mirin
     ・ 3 g bonito flakes
    ※1 : It’s still too much for 4 shrimps, so I recommend you to make some other tempura along with this! OR, you can get TEMPURA FLOUR from asian super market to get this way easier!
    How to Make Ultimate Tempura at Home
    • [ASMR] ULTIMATE TEMPUR...
    ※2: It requires some specific ingredients like above, but you can totally REPLACE with the mixture of SOY SAUCE and MIRIN, or if you have “MENTSUYU” which is literally seasoned soy sauce for noodle, it’s perfect for it.
    [instruction]
    1. Devein shrimp and crack its joins for making them straight when it’s fried.
    2. Make tentsuyu: heat all the ingredients in a pot and drain and cool it.
    3. Make tempura batter: mix egg and cold water well, add flour and mic lightly.
    4. Heat vegetable oil
    5. Coat shrimp with flour lightly, and put in tempura batter and deep frying.
    6. Dip “temtsuyu” before put it in Onigiri!

    It took me almost 3 days to make Onigiri the right way, mostly because I am lazy and wouldn't bother keep on trying on the same day.... But after doing it much more correctly, I've started bringing some to work with me in a Japanese Pento Lunch Box and people just saw mines and they wanted some.... then I started making some now and then for my co workers that paid me 5 dollars for each one and I kinda made a little money here and there... some of my co-workers are big anime fans (I myself don't watch many of that) so I'm glad that I can make them happy....
    Of course since I am Hispanic and I find myself being asked why do I make good japanese treats than I do with my own cultural food (I'm Puerto Rican and I don't want to make high blood pressure food lol) and I just shrug and say "You DARE try to Culture SHAME MEEEEE"

    Arigato gozai mashi ta from Australia. When travelling around Japan, one of the quick foods I loved was Onigiri.
    It's a bit of a surprise, because I'm the Gaigin of Gaigins when it comes to eating rice. I do like the humble white grain. But it really needs to be with a curry or something like that. However the various Onigiri, whether at the railway station of the 7-11 convenience store, never let me down with taste & that satisfying quick snack for busy people.
    I will try making this at home. Thank you.

    Hi! Thank you for the simple recipes! But for the mayo,did you use the japanese mayo? Or did you use the normal one but add soy sauce as substitute? :)

      Hi, thanks! Yeah, I used Japanese mayo called "Kewpie", but I'm sure you can substitute with normal mayo that you have, and adding soy sauce would be fine.

      Thank you for watching and giving me a comment! The reason why I use a fabric on the rice pot is preventing rice from getting water droplets. If you don't use any fabric, the rice gets too soggy and mushy.

    Can you cool sushi rice before you form the balls? And follow up, can you air fry the shrimp and what would be the time/temps for it?

      When we make a onigiri, rice should be warm. I've never made tempura in a air fryer, but it seems you can! I just found this recipe. Hope you can make it at home.www.mochimommy.com/air-fryer-tempura/

    This was very helpful! Even thought i’m not into cooking a lot but i really love sushi & onigiri and i really wanna try making them at home! So thank you for this! But i just have these 2 questions about this video:-
    That sushi rice can be cooked the same way as normal rice right? (Cuz i think my mum cooks it in a way different from urs so i was just curious)
    And second of all, when u want to stick the rice together, was that water that used? Sorry if those are dumb questions😅❤️

      2. when u want to stick the rice together, was that water that used? : I didn't get the exact quistion. I use normal water and put some salt to fold a onigiri. When I make sushi, I use the mixture of vinegar and water instead! Thanks for asking! Let me know if you have more Questions!

    What is the ratio of rice to water that you use? Mine are a hot or miss at 5:6 (rice:water) in a slow cooker. To be honest, I've had a little more success using the "first knuckle" method.

      Sorry for the late reply! It depends on the type if rice cooker and the variety of rice. That's why I didn't mention the ratio. I usually do 9:9.5 (rice:water) for onigiri and sushi because I want the rice a bit firm. For normal bowl of rice, I do 9:10. Funny you knew the "first knuckle" method.😂

      It depends on the kind of rice, I think. You might have used rice which is relatively dry and scattering. You can try with sushi rice aka short grain rice. You can cook rice a bit more moist if you the right rice. Hope it’s gonna be great!

      It was almost 500g of cooked rice for 5 normal size onigiris which is about 1.5 cups of uncooked rice.

      You sure can. Tastes great with some soy sauce, white sesame seeds, grated ginger, etc. Just keep an eye on your fillings that they are not too wet/oily. They will either leak or not allow the rice to stick well, or both.

      To be more precise, the oldest onigiri was just rice as you know! Actually the plain onigiri is still one of the most popular onigiri that you can find any convenient stores. The toppings have invented crazy nowadays, so I meant “traditional” for the toppings which have been popular for decades.
