There should be an order or queuing from right to left in servicing the clients! A shield of glass should be in placed so that no customers will not be abled to touch the products in unhygienic way !

I can give you the recipe. Use pork belly and let skin dry. Then rub in five spice powder, salt and pepper with Chinese wine( shao hsing rice wine), marinated light soy sauce and dark soy sauce for several hours. Pouch holes on the pork skin first Then put in oven face the meat down to bake for an hour. It depended how big and thick your meat cuz sometimes take much longer to cook. Use broil function to make the skin crispy.

This lively scene of a roast meat deli in Vietnam/SE Asia is not healthy or reassuring. When customers are allowed to stand so close to the prepared food and contaminate it, it is not safe or healthy. There should be glass or plastic barriers between the customers and the roasted foods for sale-plain & simple. Denials on this are not wise.
