This easy salad with tomato and cucumber can be made very quickly for breakfast, lunch or dinner without any cooking skills. Ingredients:
2 tomatoes
1 cucumber
Parsley
Spring onion
Mint
3-4 tablespoons olive oil
1 lemon
Salt and black pepper to taste

I threw in half a cup of Spanish onions only because I had them chopped before realizing that they weren't part of the recipe. Threw in half a cap full of balsamic vinegar and threw in a small slice of Boursin herb and garlic cheese. Boursin is from Quebec and imho is one of the greatest cheeses in the world.
I could eat the whole bowl of the tomato and cucumber salad. It looks so delicious.
This is a warm weather staple for us. Locally grown and processed olive oil, organic lemons from my garden. Try adding sliced black olives, garbanzo beans, brown rice, quinoa or a combination. You can adapt this into a gluten free tabouli salad with the brown rice or quinoa.

We make this in Türkiye too. We add chopped green peppers to we call it “çoban salatası” shepherd salad sooo yummy 🤤

Going to try this,,but do a vinegrette instead of lemon and oil. Skip mint, add basil and oregano, maybe some diced ham. Bit of Romano cheese on top. Summers coming and this would be a quick garden meal .
