  • Lea and Arthur Fumey lovingly craft this champagne in the town of Celles sur Ource in the Cote des Bar region of Champagne, where the best Pinot Noir and Pinot Blanc (rare) is grown. It is a blend (cuvee) of 35% Pinot Noir and 65% of Pinot Blanc and is a Brut Champagne (5-7 g/L of residual sugar).
    This champagne features rose, red fruit, white flowers, and apple characteristics, and is very energetic and lively on the palate. The mousse (bubbles) are assertive but rich and deep and the minerality adds intrigue. It can be enjoyed immediately with meats like pork or veal, strong but soft cheeses like Epoisses, or with Southeast Asian or South American dishes. Or you can tuck it away in your cellar for many years and enjoy the tertiary flavors that emerge with time in the bottle.
