Loaded Smashed Potatoes

Red Potatoes
Olive Oil
Sea Salt
Pepper
Jalapeño Pepper
Shredded Cheese
Real Bacon Bits
Sour Cream
Chives
Instructions
1. Preheat oven to 450° 
2. Boil water in a large pot
3. Line baking sheet with parchment paper
4. Cut your potatoes in half or in 3's depending on the size of the potato
5. Wash your potatoes and place in the pot of boiling water. Cook until they are fork tender
6. Strain the water off the potatoes and allow to cool for about 15mins
7. Add the potatoes to the lined baking sheet and smash the potatoes with a cup. Brush olive oil on top of the potatoes and dash with salt and pepper. NOTE: If you are going to do loaded potatoes don't add very little seasoning so that it won't become salty
8. Bake the potatoes for about 30 mins on one side, then flip and cook for an additional 10-20 minutes depending on the tenderness and crispiness you would like
9. If you are loading your potatoes, add the cheese, sour cream, bacon bits, chives and jalapeno peppers to the potatoes and place back in oven until the cheese is melted. Enjoy!!
