i am not a bricklayer. so i've got a question.
what is the roller-thingy that you used close to the end of the video?
i can only assume that it might be used to smoothen and get rid of excess mortar?
i'd be happy to be enlightend about that thing.

We use a special through-joint mortar and with this tool, we press and compact the mortar. This creates a recessed joint, completing the masonry work.

At 07:25 a roller is used. Can someone tell me what is tha thing and what is its purpose?

We roll it so the joint is at the depth we want and the joint is finished how we want.
