In this video I'll be showing you a different method to making American buttercream, that leaves you with a grit free, super silky smooth American buttercream! Honestly, this buttercream is SO GOOD it almost tastes like a Swiss meringue buttercream, but so much easier to make! I believe @CupcakeSavvysKitchen was the first channel to demonstrate this method, so credit to them for introducing it to us :)

Cupacake savvy's kitchen method was life changing for me ! Thank you!
@@lamyaandadam how fabulous! I’m thrilled!
I’ve been a massive fan of Cupcake Savvy’s Kitchen since day one. Follow the channel to learn so many new & easy ways to turn out impressive confections. I absolutely love MK’s foolproof cake recipes, tips & tricks but most of all admire her warm authenticity and respect her integrity. These are the only 2 accounts you’ll ever need to bake your best! Love both! xx
i can finally say that i made perfect buttercream thanks to you! one helpful note for people who live in hot climates, make sure ur butter doesnt get too soft before beating and/or while u wait for the milk mixture to cool down. that happened to me and my cream turned into liquid that wont fluff, i fixed it by popping it in the freezer for five mins or so the mixed it again and it fluffed soooo beautifully
Thank you! Summer days are getting to us bakers
@@Choungie haha yeah im hardly a baker tho i was just making a cake for my husband’s birthday but i had the instinct to come up with that fix cuz my mother is an amazing baker and i learned a couple things from her by observation only
@@HaruChanxxmay i know how long will it last outside during hot weather?
@@dianafaqihah8507 it honestly holds its shape quite nicely in room temperature during the hot summer months even without AC on -and i live in 40+ degrees weather- but i didnt get to test it being in room temperature for longer than an hour. the cream does become soft and airy though this time but it doesn’t separate or fall apart. hope this helps🫶🏻

Absolutely amazing! The best recipe so far! Thank you!
It's a MUST TRY!!!! This is awesome MK, thank you! 💜
I will definitely try this buttercream. It looks like it pipes beautifully! Thanks for another great recipe!
Hey! 🙋🏻♀️🇷🇺I'm from Russia and I have a lot of familiar confectioners,
So, I give you a recipe for a dense and stable cream, which is used by many confectioners in Russia:
•400g cottage cheese (cream cheese)
•100g of butter (82.5% fat content)
•80g sifted powdered sugar
Softened butter at room temperature (get it out of the refrigerator at least 3-4 hours before the start of cream preparation), mix together with sifted powdered sugar until the butter is lightened and fluffy, then add cold cottage cheese, beat for a few more minutes, try not to overdo it! If desired, you can add vanilla extract. If the cream has become too soft, put it in the freezer for 20-30 minutes in a pastry bag.
Its moderately sweet cream, but perfectly delicious!!
Just try
Also, you can make cream for the layer of the cake, not the outer coating of the cake!
•300g cottage cheese
•150g whipping cream (33-35%)
•70g powdered sugar.
All ingredients should be very cold. Beat cream cheese with powdered sugar at medium speed of the mixer until smooth and homogeneous (do not stir for too long), leave aside.
We take the whipping cream and whisk in a separate bowl until soft peaks, there is no need to whisk the cream tightly, because we will add cream to the mixed cream cheese and powder, and whisk everything together at low speed.
It is important not to overdo it, because the cream may begin to delaminate.
Good luck !❤

Thanks for the post ma'am,that's how my grandma makes her frosting she uses boiled water or milk cuz she doesn't like graininess in her frosting. I've used this recipe a few times now with great success! For me - a person that bakes like twice a year - the unsung hero is the technique that gets you out of sifting the icing sugar. That used to take me ages and this makes getting the lumps out sooo much easier. Love this channel ❤
Love this. Thank you so much for your helpful advices

Well done! I have been making this buttercream for nearly 50-years now, as it was a recipe that I found in either Sunset, Reebok, Woman's Day or one of those magazines. Was very nice that you stated where you obtained the recipe and gave them credit. I am wondering where they got the recipe from! Anyway, thanks for posting a sensational recipe.

Amazing.Thanks for sharing
Thank you for replying...i will definately try this x
I had made this buttercream recipe twice now and it's going to be my go to buttercream. I cannot believe how smooth, grit free, perfectly sweet this buttercream is. Just don't skip the 10 mins of whipping at the end that makes the difference. I did 7 mins and it was smooth but I could still taste the butter so I put it back for the extra 3 mins and like magic it was like a swiss merengue buttercream without the egg whites ❤️
hey was it nice? too sweet?
@@Israna523. no too sweet just like a smooth, airy and delicate sweet cream. My family could not believe it was buttercream because it was so velvety and not super sweet.

OMG. I used the recipe this evening and it is smooth as silk ❣️. It's not grainy and it's not overly sweet. This buttercream just FLOWS out of the piping bag. And it's beautiful. Love it!
I did add in an extra half cup of powdered sugar because I don't want too much butter flavor and I have a real sweet tooth. It was absolutely perfect.
Hi when did u add in the extra powdered sugar..into the milk or after

Looks lovely....is this butter cream good for hot weather???
Thanks for sharing this fluffy smooth buttercream and just asking if I can use it under fondant or not ?
Shukran for sharing
You're most welcome! :D
Thank you so much for sharing, very kind of you. Please can I use salted butter instead to replace the unsalted butter and then not use salt in the mixture. Will this work?
I just made this. I hate making buttercream the icing sugar goes all over me and I can never get the right consistency. This recipe is perfect. The buttercream taste soo good and not overly sweet. You are a CZcamsr I can trust. Keep up the good work!

Hi MK, l absolutely love all yr videos. Thank u. Can this buttercream be used under fondant?
The best buttercream
Thank u for this😍😍 can u plz tell me whats the butter brand u use🤗
Trying it!!!
Awesome! Hope you enjoy it :D
Thank you so much for this recipe. I tried it and everyone loved it. I am told to make 2 tier cake using same buttercream. Is this buttercream OK for 2 tier cakes. Pls let me know.
Hi from South Africa💛 Thank you for your very Informative and useful videos. I have tried most of them and with great success. Now l want to try this no grit buttercream ...but first l would like to ask you a few questions if you don't mind.
(1). Can l use this recipe to pipe cupcakes with Russian piping tips? Will it be stable enough?
(2). How much frosting would l need for 200 cupcakes?
How much Ingredients is needed? Specifically the butter and powdered sugar
Thank you in advance🙏
(2).
Ohhhhh thankyou soooooo much I hated the grit texture in usual buttercreams il definitely use this one
Thanks Maria! For a cake that size I would say to double the recipe or even 2.5x the recipe depending on how much piping etc you'll be doing :)
Hello, thanks for sharing this great recipe. I just tried this but mine seems too silky(less stable).
If I do t want to use meringue powder, can I add more sugar in the milk to get the stability?
Lovely recipe would love to try it. Just wanted to ask if i use half butter amd half shortening and add melted white chocolate will it be stable for a hot weather???
Delicious, light and pillowy. Added Dutch processed cocoa in with the icing sugar mix...mmmmm
Awesome! So happy to hear you enjoyed the recipe Kim :D if you manage to find a spare minute I'd be so so grateful if you kindly leave a review on my blog, it really helps my content reach more people :D thanks so much again for trying the recipe :)
how much cocoa did you add?
Just tried this recipe out and it is amazing! Never using regular American buttercream again.
Can you please rate this for me? Between 10-1 ... 10 being the sweetness level of ABC and 1 being the sweetness level of whipped cream frosting where would this fall? SMBC is the one I use most often due to the sweetness level as well as how much butter the recipe I follow uses (which is 3 sticks for 7 egg whites) That recipe doesn't leave that buttery film on the tongue/in your mouth. This one uses an entire pound which kinda has me worried. What would you say the 'feel' is like? Thanks in advance... 😉
❤

Hello MK when making different frosting ,it would be of help if you can tell at the end if the frosting made by you is good to cover a cake or not.
After frosting the cake with this buttercream, how long can it be in room temperature for it to be safe to eat?
Love your videos and recipes. I’d like to try this buttercream but wonder if you have tried using milk alternatives like oat milk.
Hi! I just discovered your channel looking for a filling for macarons. Can I add food colouring to make the cream blue? And if I can, in which stage? Thank you 💞!
wow great
Thanks for the recipe I will try it. Is this buttercream is suitable for cake layer?
Does this recipe covers a whole cake? Or will I have to double or triple it?
Can this be flavored using other ingredients than extracts? If so, what methods would you use and how much?
Hi mk, i love the crusty buttercream, instead of meringue powder can i use vegetable shortening?and hows the ratio?tq
Can I use half ratio shortning and butter instead of meringue powder for really hot weather?
I love this recipe, thank you. Just wanted to ask, though, can you colour this recipe please?
I love this. Can I add food gel in it?
Can we make this frosting a day prior and keep it in the fridge?
Thankyou 😊
This buttercream looks amazing and smooth. How would you go about doubling or tripling the recipe?
Thanks Julie! Simply double or triple the recipe as you normally would, might just need to mix for a few extra minutes at each step :)
This looks great. Could I add a bit of mangopuree to this for a light yellow mango flavoured buttercream?
Thank you so much 🌷🌷 Can I use this recipe for Russian piping nozzles?
Hi MK thanks for tutorial. This looks superb. Will it cover an 8'' 4 layer cake with swirls, please?
Hi Maria! For that size cake with swirls I would recommend doubling or even making 2.5x the recipe depending on how thick your frosting needs to be and how much piping is required :)
Hi, thank you for sharing the recipe .im going to use this recipe for cupcakes. Does it melts at room temperature?
Yes yes yes!!! No more sifting!
Hi sis can use salted butter or margarine for frosting?
I find it very buttery. Very silky smooth though
This will be a great way to use confectioners sugar which has crusted due to improper grocery storage. I always have to check the shelves for the fluffy packs of sugar icing and avoid the ones that are( from the jump) hard or lumpy. Oh, and yes. Anyone may have old bags of loosely stored icing sugar in the pantry... Happens to be best of us. 🤭😶
So so true didn't think of that! :D
