Genetics major here to give my two cents to this. Evolution like that would take millions of years and it still would not produce a symbiote as we know it. The best bet is some kind of organism that has proteins in its cellular membrane that allow it to move the lipids freely as it chooses. Going into and out of the pores of another eukaryotic organism is tricky but I imagine it would require some kind of diffusion with chemicals from the eukaryotic animal and the symbiote. As for changing its features like teeth and such, you would have to have an organism that could either change its own DNA expression at will (very unlikely) or an organisms that can change the color of certain parts of its own body and use proteins to make its own structure more stiff (solid-like) which is more likely. As for being sentient, either the organism just produces hallucinogenic effects on its host or it has neuron-like cells that form a circuit that allow it to be sentient.

My personal theory for a symbiote is it is a slime mold with some gene from the mimic octopus and the bacteria you brought up during you what is spidey's webbing made from. The slime mold pulses to move so that explains its weakness to sound. Also, the slime mold species I was looking at was able to grow up to one meter and had very impressive mental capabilities for a single cell organism. The genes from the mimic octopus are important for making structures such as the spinnerets or setae for sticking to walls and shooting webs.
