I've known about it, but you never hear about it. I don't have a lot of time to 'experiment' with it, so I think a longer video using real life examples explaining how/why you'd use it would be terrific.

So, I want to know if there is a scientific method of how to turn an image to bw...

When are they gonna deal with the brush lag problem with the rulers in PS 2019 together with the Wacom tab and the MAC. They promised a couple of times that it would covered with an update but it is still laggy with and without the rulers. This problem is already 6 months old. I know many people who got back to PS 2018 cause it is a drag to work with. Are you in the position of checking on this matter.
