Being Indian I just want to clarify that we (specifically in Northern India) don’t use our entire FIST like she likes to do when eating. In fact, we only use our fingers and make sure the food doesn’t touch the palm of our hand. She is a messy eater.
P. S. I edited my comment keeping in mind that some people in different parts of India do use the palm of their hand to eat!

The reason why some people react to spice much easier than others is due to the fact their culture includes a lot of spice into their diet. For example, people who live in India eat curry. Curry can tend to be very very spicy to people outside of India culture. To them however, they only taste the flavor of the pepper, not the spice. The reason for this is the fact that their bodies evolved into not having pain receptors in their tongue.
The heat you get from a pepper is actually the pepper's defense mechanism. Inside of peppers, you have capsaicin. Capsaicin is an oily substance that comes from peppers. The spicier the pepper, the more capsaicin it produces, which leads to more pain. So the more you introduce "spice" to a culture, the more tolerant they are to the spice due to evolution deciding to remove the pain nerves in their tongue. Your pain receptors in your tongue ARE NOT the same as your taste buds, so don't get that confused.
