  • The term "barbecue" means something different depending on where you are and who you ask. From Texas and Tennessee, to North Carolina and Alabama, every region has its own way of doing things. Like all red-blooded Americans, Sean Evans loves his pulled pork, baby back ribs, and brisket. But as a New Yorker, he can't always pack up his bags and head down south for dinner. Luckily, the Big Apple Barbecue Block Party brings some of the nation's best pitmasters to NYC every year.       @@PianoScenesMoviesandSeries I'll be honest, there was a time where i was living off takeout and energy drinks. When times got tough I did the canned food and the v8 "energy" drinks for awhile. Now once and awhile I buy an energy drink because i like the taste, but I noticed the cheap diet resulted in me feeling better day to day. That doesn't hold a candle to being a kid and living with my grandparents that raised chickens and a garden, but I was rather surprised at how bad i was screwing up by eating takeout every night. And lets be honest, pickles aren't bad for ya. When i was in the Army I habitually drank a small cup of pickle juice after PT (the morning workout) and it always perked me up. I cant complain too much, but i am working towards a flock and garden of my own, as well as a couple cows.

      Cleveland Maker have you tried Snow's? just an hour east of Austin. Texas Monthly put it #1 over #2 Franklin's for the top 50 BBQ joints. I haven't yet but I'm planning on it soon.

    I think one of the most exciting things happening in barbecue is the breaking down of the regions and how more restaurants, local cooks and backyard grillers are experimenting with things outside of their traditional regional flavors and meats. I live in Memphis, and one of the things John Wheeler didn't really mention is that Memphis ribs are traditionally just dry rubbed. Sauce is served on the side, but it's becoming more and more common to have a sauce glaze as an option. We're also beginning to see brisket served in area barbecue joints. I'm also a Master Certified Barbecue Judge wit the Kansas City Barbecue Society with nearly 10 years judging experience. The things I get to experience on the circuit are usually about three-to-five years ahead of what you'll see pop up on cooking programs and about also a few years ahead of what you'll see popping up in commercial products. It's a great time to be a fan of barbecue.

    Missouri BBQ culture is the best in my opinion... too bad we did not get representation. Kansas City... St Louis... ribs and burnt end. Keep it simple, sweet and sassy. If someone has to explain it to you they are over thinking it.

      Had BBQ from a Kansas City Missouri based company at the jazz and rib festival in Columbus Ohio. Big Wolf? Bad Wolf? Big Bad Wolf? I can't remember what the name was, I just know it was something like that. The sauce was amazing, but the entire package was mediocre because the ribs were almost nothing but tendons, and we got 1/3 ribs from 2 different slabs. The best ribs overall were from Memphis Tennessee. The meat was tender, but not fall off the bone, the dry rub seasoning was so good, no sauce was needed. If that's the best BBQ Missouri has to offer, I'm sorry but it's highly over rated.

      Well, considering "best" is subjective, I can't fully agree with your assertion that the best has never and will never be at a competition. That said, because it is subjective, it does make sense why someone who comes from a family that makes barbecue regularly would lean on it as the best. Nostalgia can be a very strong seasoning (if I can be allowed to be a bit poetic).

      Kenny Roman sometimes you restrict yourself for moral or health reasons. I would never just slam back beer all day and do a bunch of drugs, so that's living with a restriction, but I'm perfectly happy anyways.
      The meat industry is actually causing significant harm on the environment, supporting it is actually one of the worst things you could do to the planet. So I respect the dedication it takes to make that kind of change in one's life.

      I used to cook vegan food for some one. I asked myself why, when they had food that tried not to be. Like bacon, beef, and, chicken. It's like having sex with and marrying a blow up doll. No need to eat real vagina, have a real commitment, or have real sex. Can't replace the real thing! LOL

      Christian Robles That's not a very good argument. If fewer people ate meat, there wouldn't be so many chickens, cows, pigs being factory farmed, living pretty shitty lives, and then being slaughtered. I eat meat and when confronted by militant vegans I just say "yeah, I guess I like eating meat even knowing about some of the ethical issues".

    Lol that Texas pit master mentioned burnt ends. That's cute. He barely knows the meaning of burnt ends. There is only one place in the world that makes real burnt ends, and that's Kansas City. Best pulled pork is Carolina, best beef brisket is Texas, best ribs if you like dry rub is Memphis, best ribs with sauce and burnt ends is KC. Also, best baked beans is Smokehouse Barbeque in Gladstone, MO, which is a suburb of KC, so we've got the best baked beans as well. And if you think ruining ribs with mustardy sauces is cool, then STL "BBQ" is for you. End of discussion.

      Had BBQ from a Kansas City Missouri based company at the jazz and rib festival in Columbus Ohio. Big Wolf? Bad Wolf? Big Bad Wolf? I can't remember what the name was, I just know it was something like that. The sauce was amazing, but the entire package was mediocre because the ribs were almost nothing but tendons, and we got 1/3 ribs from 2 different slabs. The best ribs overall were from Memphis Tennessee. The meat was tender, but not fall off the bone, the dry rub seasoning was so good, no sauce was needed. If that's the best BBQ Missouri has to offer, I'm sorry but it's highly over rated.
