    You know I absolutely love this! As an experiment, try out coconut oil in lieu of the peanut oil.

      Should work just be cognisant of the lower smoke point of coconut oil. Curious of the synergism when combined with the coconut vinegar in the marinade.

    I tried Chicken Adobo while we were in the Philippines - and yours looks just as good, if not better. Now, if we could do away with the garlic and onions!! (That’s just me)

      Not a problem, just wipe your chicken dry then strain it prior to serving it.
