HuffDaddy BBQ Tutorial - How to Smoke a Leg of Lamb

  • Whether it is for Easter or just wanting to try something different, leg of lamb is an excellent choice. This herb and citrus roast with just a hint of smoke will give your dinner guests something to go crazy for.
    What you will need:
    1 boneless leg of lamb (5 - 7 lbs)
    Kosher salt
    Coarse black pepper
    2 Tbsp of fresh rosemary - finely chopped
    2 Tbsp of fresh mint - finely chopped
    1 Tbsp of fresh thyme - finely chopped
    5 cloves of garlic - finely chopped
    1 tsp of crushed red pepper
    Zest of 1 lemon
    Juice from 1/2 of the lemon
    1/4 cup of olive oil
    thermometer
    butchers twine
    Pellets/wood of choice (I like fruit blend of cherry and apple)
    Pre-heat your smoker to 275 F.
    Remove the leg of lamb from packaging, including any net or binding. Unfold lamb to access inside of the roast.
    Inspect lamb for any silver skin, sinew and hard fat. Remove all of these things that you can, leaving any soft fat.
    Sprinkle liberally with salt and pepper on all parts of meat, including crevices.
    In a medium size bowl, combine herbs, garlic, red pepper, the zest from one lemon and the juice from half the lemon. Slowly add olive oil, stirring until a paste or "sludge" is formed.
    Cover all sides of the lamb with the paste, spreading evenly.
    Take the unjuiced half of the lemon and cut 4-5 slices and place on the lamb then fold the lamb around the lemon slices, forming a roast.
    Use 4 - 5 pieces of the butchers twine to tightly tie the roast to hold shape.
    Set the roast in the fridge for 3-4 hours to let the flavors penetrate the meat.
    Remove from the fridge and place the leg roast in the smoker.
    Smoke until outside turns a nice mahogany color and the internal temp of the roast is about 135F for medium rare or 142F for medium (This will allow for carryover cooking while resting).
    Remove the roast from the smoker and let rest, tented with foil, for 20-30 mins.
    After rest, remove the twine from the roast, gently unfold to remove the lemon slices and then reform the roast.
    Slice like you would a ham or prime rib.
