  • In south India, Chettinad is a famous style of cooking. And one of the famous dishes in Chettinad is Kola Urundai Kulambu. It is usually a non-veg dish using mutton. but We thought we could do it in Veg style. So we are doing it with the Banana flower(Vaazhaipoo). We are gonna achieve the same punchy flavor and taste today. It's a proper Vaazhaipoo Chettinad Kulambu. This is a two-stage process where we prepare the Urundai first ad to mix it with kulambu. The critical part is getting the correct consistency on the Urundai.
    Here are the ingredients for this dish.
    Vaazhaipoo Kola Urundai Kulambu
    For Kola Urundai
    Vazhaipoo - 1 nos
    Groundnut Oil - 2 tbs
    Cinnamon - ½ tsp
    Cardamom - 1 nos
    Cloves - 1 nos
    Fennel seeds - ½ tsp
    Ginger - ¼ tsp
    Green chilli - 1 nos
    Onion - 1 nos
    Curry leaves - A sprig
    Coriander leaves - 2 tbs
    Turmeric powder - ¼ tsp
    Coriander powder - 1 tsp
    Chilli powder - ¾ tbs
    Gram flour - 2 tbs
    Salt - As per taste
    For Kuzhambu
    Gingelly oil - 3 tbs
    Mustard seeds - ½ tsp
    Fennel seeds - ½ tsp
    Dry Red chilli - 4 nos
    Garlic - 8 cloves
    Curry leaves - 1 sprig
    Shallots - 20 nos
    Black pepper powder - ½ tsp
    Tomato Puree - ½ cup
    Turmeric powder - ¼ tsp
    Chilli powder - 1 tsp
    Coriander powder - 1 tsp
    Asafoetida - ¼ tsp
    Tamarind - 1 small lemon size
    Coconut (for milk) - 40 gms
    Coriander leaves - few
    Salt - As per taste
