    I've seen people use the swirling water method but they're using a pasta pot size pan of water. This looks a lot easier using a frying pan. Getting the raw egg in looks a lot more simple.

    I find the egg sticks to the pan 🍳 so I've invested in a good pan that the butler's use . So my advice to everyone is buy good pans 😊

    Water should be stirred before the egg goes in.
    Whatever your method your eggs always look delicious

    We always use white vinegar not malt and yea I agree the swirl is a myth. Sometime we have to cook up to 6 poached eggs at once, if you swirled you'd end up with a giant 6 yolker :-) But your eggs look lovely :-)

    I always strain my egg through a s/steel sink strainer over a ramikin first, if the albumen runs through too fast it's likely a bad egg. You need the freshest of eggs to make a successful poached egg. Any of them could have been a bad egg just cracking them straight in.
    Always spin the water first if doing them in a deep pan, the centrifugal force will keep the egg together.
    I place mine in a frying pan the same as you and I place them around the pan in clockwise order so I know exactly which one has been in the longest, I find 2 ½ minutes in steaming water to be perfect, not bubbling water just still & steaming.
    I bet it's all different in a busy cafe with so much other stuff going on though.

      I’m always doing mine in a frying pan, so much easier but I’ve always put vinegar in. Think I’m gonna cut the vinegar and do it your way, thanks for the video xx

    Frying pan is the only way. Plain water only. I just bring to boil, turn off and drop eggs in. Never fails.

    I've seen the eggs you serve in your place, thanks to Martin and Sharon and they look absolutely perfect. When we have done poached eggs here, we always stirred the water very fast and THEN dropped the egg in. I think I'll be doing them YOUR way from now on though because like I said, yours are perfect. Just how I would like them. Thanks so much for doing these videos and showing us how your food is cooked so glad you decided to start your own channel. I have subscribed and I wish you both the best of everything Dale and Nicola. Sadly, I don't live close to The Ragged Apron as I would be a regular customer. 🤩

    Great tutorial. The egg without the vinegar or swirling definitely looked the best! I used to put the eggs through a sieve first, but I don't think I'll bother anymore. Yours always look great 👌Cheers.

    Hi Dale and nocola i always do mine in frying pan no vinegar it works every time I've tried egg poacher pans and the plastic egg poacher in microwave they were rubbish .love your videos love fran xxxx

    I poach my eggs in a scoville small frying pan from.asda i just get the water boiling then turn the temperature down a touch then crack the egg in and wait for the magic to happen hey presto after a few mins a lovely poached egg ❤

      Couldn't wait just found a small non stick frying pan I don't use and cooked a poached egg in it with no vinegar. Perfect with a bit of tomato sauce will be eating lots of poached eggs from now on. Better than winning the jackpot. 😛😁🤣 x

    Hi Dale and Nicola, i think how you normally do them is the best way. Whenever you see Martin's eggs they are always perfect, in fact all your meals look lovely. If i lived near you i would definitely visit your restaurant. I do mine in a bowl in the microwave

    Do you think egg temperature matters? I.e. they must be at room temperature.

      The water temperature is the key, the egg temperature doesn't make a difference
