Yes, it´s 180 degrees celsius.
Yes, it´s better to let the meat rest a little while
and I´m not quite sure, whether you can say grill or not - my translater translates the german word grill with the english word grill, not broiler. anyway - you need a lot of heat from the top for your crust.
And somebody was so nice to tell me how to say the word rind correctly. I will remember this.
Above all that, I hope you enjoy the videos and the recipes work out fine for you
Happy cooking ;-)

I was stationed in Germany when I was in the military. I had a meal like this. I loved the potato dumpling!! I loved the whole meal!! Fabulous!!
I made this for mein Vater on his birthday. He absolutely loved it. Thank you for sharing this recipe.
I LOVE watching you cook. It is everything I learned as a kid and have been doing for 55 years and never knew the origin! Grandma taught me how to make all these things but never called most of them by the German names. Its all the same ingredients, the lack of exact measurements, the same techniques and all so familiar! So I had to research and it seems her ancestors are mostly from Nittendorf, Kelheim and other Bavarian towns. This is my comfort food!!! Thanks so much.
Been to München many times since I was a baby in ‘66.
Love hanging out and
shopping in the main pedestrian zone and having a Weißbier and a Gulaschsuppe at the Ratskeller :)
Hello from Canada :)
I was in Munich with my sister in 2013, we had roast pork in old M.unich at Weisses Brauhaus, it was amazing. Germany is an amazing beautiful country with very warm people. Please keep up the great videos. I'm coming back as soon as I can to visit again :) I do miss the weissbier.
Youre welcome everytime 🙂
My grandma is from Germany and she raised me and my brother. She made this for us often. This year my family is honoring her and our roots by doing a German Christmas and my brother and I will be cooking this the Sunday before Christmas for our family (our cousins were stationed in Germany growing up too). Thank you so much for your videos. They definitely bring back wonderful memories!
I grew up enjoying the cooking of my Grandmother who emigrated from Germany in the mid 30's. I'll never forget her Pork Roasts like this one and her creamed spinach and red cabbage. Her Spatchela was to die for when covered with brown gravy..!
I subscribed to your channel and look forward to more videos.
Spatchela means Spätzle? If yes... Oh my god yeah it is just amazing. Spätzle with dark sauce to die for 🤤🤤🤤👍
@@Humpelstilzchen Sorry... I kinda knew I didn't spell it correctly but you knew what it was. If I close my eyes in a quiet room, I can hear her voice and smell her kitchen. I miss all those Holidays with my Mother, Father, all three Sisters over at her house enjoying all of her cooking. If you have a German Grandmother.... Treasure her as often as you can.
@@Duschbag Hey dont be sorry landsman im not perfect in english too. Yes i can believe that. It is like home isnt it? I am german in bavaria and i really know what you mean. My gramma passed a few years ago but my mom and i learn her recepies. We always cook together. My friend if you ever come to southern bavaria i invite you in my home 🙂
@@Humpelstilzchen I will certainly keep that in mind. I would very much enjoy a visit to your home. Likewise, if you ever find yourself near St. Louis, MO. I invite you to my home for some BBQ and Grilled Wagyu Steaks..! 🥩
@@Duschbag Oh yes. Sounds great 😁❤
Thanks for sharing. I love German style pork.
This recipe looks so good. My great grandparents came to the US from Germany and my mother-in-law is German so I have been trying to cook traditional recipes.
Thanks for sharing!I was stationed in Germany while in the Army back in '78 and I love and miss German food.I will be adding this, dumplings, and kraut salad to our Thanksgiving meal this year; along side the turkey of course.
I just want to say thank you for sharing these traditional German recipes!
Beautiful crust . Thank you for the video.
I made this for friends Christmas Day 2023 (using a 7 lb roast), and everyone asked to take some home, esp with the sauce.
It was a successful dinner.
Hmmmm. Yamm, Ohhh yes! Thank you for this video.
I made this with a 3 pound pork roast. After 1 hour it was to temp. I think pork does better at a lower temp. I'd do more like 200 F. Still turned out good, but I luckily checked it halfway through. As a person of German descent, It's great sharing food from my fatherland with my children.
Danke sehr Klas! I used to live in your beautiful country in the 60's. Oberehlenbach und West Berlin.
Looks amazing! Love German preparation style.
I can't wait to make all these wonderful reciepes for my family they ring Comfort and Love I bet your home smells devine thank you for sharring and God bless 🙏💜
Thank you for sharing. Love most things German.
Thanks! This helped me answer a few questions I had about roasting the pork. You don't cover it, but most of the recipes I see online suggest that you do. It's in the oven now. Let's see how it goes!
Hope you will have great results.
I did! I think covering the pork can make it mushy, so your recipe stands out against the others that recommend covering the pork as it bakes. I made it again tonight, and it was very good. My kids (the ones that eat meat) loved it. I used Guinness for the beer. For side dishes we had spaetzle and braised cabbage. Classic.
My grandpa was pure German, a butcher who drank a cup of blood a day. He married a pure Irish lady. My dad's mom was Dutch, and his father's name was Butterfield, an original English American name here in America since the 1620's. Going up in California we ate food recipes from many countries, with so much fresh produce you wouldn't believe.
Hello Sir. I just made this. one of the greatest pork roast recipes of all time... thank you very much
That looks delicious. I peel my onions the same way, too.
I made the roast Pork just like you did with the exception that I added some chicken and some vegetable broth and it came out wonderful. Thanks again.
Great video thank you. I love Germany and food from all the regions and this looks delicious. In English the "crust" on roast pork is called "crackling".
In Bavarian it's called "Rammerl"
I love german food , there's a german restaurant in Carlsbad ca. That I go to , but always been curious to try to cook it myself. Thanks to your channel I will give it a shot.
My Oma and mother were German. We lived there over 8 yrs. Always had pork roast and Knodel very often. I watched my Oma make half and half Knodel so many times
good,simple and practical
congrats
Had this in Munich this past summer. Yum !
Complete with the weird fluffy potato dumpling. On the fence if i liked the dumplings or not, definitely very different from your standard American mashed potato I was expecting, but the pork with crispy crust was awesome !
Look's amazing. I will have to give it a try.
When I was a child, my mother would cook a pork roast and let it stand. That is when my father and I would sneak in the kitchen and steal all the crust off the roast, that is the best part!
Looks primo, I was surprised that the pork was never covered and it came out so moist. Great stuff.
Making that now in Chicago - will watch the potato dumpling recipe next! Can't wait to eat it!! Danke
That looks fantastic!
As a bavarian i say good job looks good
Can't get more Bavarian than that. Thank you for sharing.
can I come over for dinner... I am in the USA of America

Hello! Just wanted to let you know I tried to make this meal, but since I'm lazy it ended up as roasted pork tenderloin with boiled yellow potatoes and apple cabbage sauerkraut...but my family and I enjoyed it and we had a great German food night! Thank you for the inspiration and the great recipe! I'll do it right next time I promise!
Es sieht super lecker! ❤️

Favorite places to eat in Munich? Haxnbauer, just off Marienplatz, and Wirsthaus Zur Brezn, on Leopoldstrasse. Why? For the pork of course! Crispy skin is amazing! Thanks for the video.
Cooking with Christoph Waltz :)

I'm glad Sebastian Vettel has his own cooking channel. A man of the people.
So good
Super klass
Interesting. In Sweden they use carraway seeds for seasoning cheese and certain types of bread. Very tasty! I will try this for sure! As a guy of southern italian origin, we make pork roasts seasoned with the "divine three" for pork - rosemary, sage and garlic.
Oh, by the way - I hit that subscrive button. I like your style and the way you cook.
Thanks for subscribing.
I have had the pork roast italian way. It was great.
@Edward Snowden So then it's probarbly cumin I'm referring to when mentioning that swedes use carraway seeds in cheese and bread, because the swedish word for it is "kummin". When I translated carraway seeds to my language it actually said cumin, that's why I wrote "carraway" seeds, but I meant cumin.
Guess I have to research further about carraway seeds since you say they are different from cumin
That is the REAL Bavarian Schweinsbraten in Dunkelbiersoße !!!
High five from an American in Munich
Don't worry about your English, its a lot better than my German! Sehr Gut!
Well done ..My grandfather came from Germany my mom is German obviously ( but her mom was English and Altho born in USA she would make sour kraut with caraway seed and pork roast with caraway seed. In baking shed use shed use allspice or caraway and it’s the spices that make this food great. The best bakeries are in my opinion is Germany. Bavarian. Also my dad is from Uppsala so I’m a mix of German English and Swedish. In sweden we use spices like German foods.
i love your videos! i would love to see you make sour rye bread
You are so very convincing and equally cute.
I will definitely make this for supper and
think of you. Thank you. Merry Christmas!*
Es scheint sehr einfach und lecker zu sein 😋😋
Greetings from Los Angeles,
Could you please make some Fränkisch Enten braten? It’s what I miss eating the most and I sadly cannot find any recipes for that. Love your food ❤️
Just subscribed. Amazing channel!
Thank you. We try our very best😊
In Canada it is very difficult to find pork with the skin on. I have managed to get it to make this, but I had to order it in advance from my local butcher shop.
Gutten tag broder. Quick question, can I cook the beer and pork on low heat and cover the lid, instead of the oven?
How do you get a good crunchy rind? I never seem to get that right.
Crackling!
Looks delicious chef. I am always looking for a good pork recipe as I always seem to cook it (pork) wrong. Mine always seems to dry out. This looks juicy and delicious. I will definitely give this a try.
Please do. It‘s definetly juicy
I tried this yesterday, absolutely fantastic! Unfortunately, I only had a bottle of that certain famous beer from Bremen (Dunkle being hard to get in the UK and not wanting to use my last bottle of Franzikaner!) but the stock turned out very tasty. Unfortunately (again) I put too much of the carrot into the sauce and ended up with a beer-y, porky, carrot-y soup, but I thinned it down and it was great. I will only cook roast pork this way in the future. Thanks a lot for your channel, brilliant!! PS Do you have a good recipe for Dampfnudeln?
GOOD
I just came when I put German Recipes I love German Food and Polka
Hi! I’m new in Germany! Love the recipe😍 would really try it soon. What specific beer did you use though?
It looks like König Ludwig dunkel
You can use all typ of german dark beer especially dark wheat beer, called dunkles Weißbier :-)
You made the comment that the dictionary translates the German into English as grill. A grill heats from the bottom while a broiler heats from the top. Great recipe and video. Well done.
Okay. Understood. Thanks. 👍😊
Sieht lecker aus
subbed, sorry for coming in late, got a bit of catching up to do.
My favorite food is Sauerkraut
I bet this tastes good! 😊
It does 😊
A classic. I like a blend of dill, cardamom, mustard, and a hint of paprika along with the salt, and let it hang out overnight in a light vinegar and sour cream slathering; the 2 onions get thin-sliced and act as both bed and blanket for the snoozing piggie.
Hi. I'm in South Africa. Can I use Castle milk stout?
I never understood why other American families made their roast with beef and my family always used pork. Then I studied my history. My family came to the US from Bavaria.
Maybe with a bit of luck I will get to visit Germany and all of Europe.
I lived in Bavaria when I was in the US military back in 1979. It was very beautiful then and had a great time there. Very clean place and the people were very nice to us. My family on my fathers side came from Hanover Germany to Boston in the late 1800's.
Chris Koop that is one of the benefits of being in the military... the travel. My bf is a Marine. He is in the UK right now. He has been to Germany many times and was treated wonderfully by the people there.
I wish you good luck for that, you will enjoy it.
But for visiting *all* of Europe you need some extra time.
and I always wondered why nobody else used caraway seeds. Then also found my Bavarian ancestry.
Can you thicken the gravy with flour?
Lecker 😋😋😋
Do you let the meat rest for any length of time thanks
I was in munich many years ago and remember how delicious the roast pork gravy was. I have never had gravy like that here in the United states. Thank you for teaching us about it. Do you have a recipe for the type of potato Salad and Kraut that was served with Bratwurst in the Beer halls?
Have a look at my Krautsalad-video. That´s the bavarian way to prepare it. Yes, potato-salad is some recipe that has to be done :-) thanks for reminding me!
Vielen Dank. I would also love to see a recipe for another Munchen specialty; Lebeknodel suppe. I had it many years ago in a restaurant next to or in the Hotel Daniel on Sonnenstrasse and it was the best I ever tasted.
Made this one, very tasty. Do you have any foods that I can use my romertopf to cook?
There are so many things. Try this www.google.de/search?q=römertopf+rezepte&ie=UTF-8&oe=UTF-8&hl=de-de&client=safari
And use the google translatir. Gild luck
