- Today I'm sharing my family's secret ingredient to making incredibly tender Italian meatballs! They're better than any Italian meatball I've had and are the best addition to serve with your favorite pasta. I hope you enjoy this recipe as much as my family and I do!
SECRET INGREDIENT ITALIAN MEATBALL RECIPE:

INGREDIENTS
1 lb ground beef 85% lean is best
1 lb ground pork (or split 1/2 lb pork + 1/2 lb veal)
1 cup breadcrumbs
2 eggs
1 cup ricotta cheese
1 cup fresh parmesan
1 small onion or half of a large or medium onion
2 garlic cloves
2 teaspoons fresh parsley, finely chopped
2 teaspoons fresh basil, finely chopped
1 teaspoon fresh oregano, finely chopped
1/2 teaspoon (each) salt & black pepper
3-4 cups marinara

Finally!!! A meatball recipe that I actually like. I was in Tuscany several years ago and had the best meatballs of my life, I've tried over a dozen recipes by many different Italian CZcamsrs but none have come close. This one is almost perfect. The texture is spot on. Love it. I'm definitely subscribing and can't wait to try some more of your recipes. ❤
I appreciate that a lot, Damian!! These are definitely the best I've had. A lot of Italians in Italy like to do milk with the breadcrumbs/soft bread for moisture, so that's an option instead of ricotta. But i think ricotta does the trick perfectly:) I'm glad you enjoyed them so much!
try chopping then sauteeing the onion if you don't want it to be noticable inside the meatballs, it works as well.
My mom occasionally did it that way so there wasn't raw onion in them - great tip!
I always do that along with green pepper for meatloaf.

My family cooks the meatballs right in the sauce. No oven or frying in the pan. Put them straight in the pot of sauce and cook. All the flavor of the meatballs helps flavor the sauce. So good. I am going to try the ricotta cheese next time I make meatballs. And great job for being the first time. It's harder than you think talking to a camera

Have always made my own meatballs at home, and I thought they were pretty darn good (along with my family). Tried your recipe exactly as you did it, and I now consider my meatballs not fit for human consumption. Your recipe made the best meatballs I've ever tried! Thank you for sharing!!!!

my grandmother was Italian, from Bologna. The secret is soaking fresh bread in milk instead of bread crumbs. You will have softer meatballs

Don't know how and why white took over decorating but, it is soo sterile, cold and unwelcoming.
@@marwar819 I made the decision to go all mostly white (my island is oak) because I didn't want to regret bold colors after 5-8 years. Neutral would be the safest decision, but I'm still trying to figure out how to warm up the space!

You know your stuff! The ricotta is the secret ingredient. It gives it that velvety flavor and the moisture that many meatballs lack. I like the blend of herbs as well. I made these today for the family, and the girls brought there boyfriends.
OMG Lady they went down so well you would not believe it !!!.
My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he'

Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.

The appetizer, meatballs at Carrabas have ricotta cheese in them. They are the best meatballs I've had. Also, I like to mix all of the ingredients first and THEN add the meat.

I'm not sure, since they're super tender I don't know about pressure cooking!

I do the bake method, also, but then i add to crock pot of my tomato sauce/paste/oregano that has been simmering on low for awhile. 😊

Beautiful chef, presentation, kitchen and food. Similar recipe here, except I turn the meatballs 3 times way in oven to prevent a flatter side then cook more in sauce.
A dear buddy insists on plenty of cheese in the sauce when simmering, and it is pretty awesome too. I cry too much finely mincing the onion, but will give the grate a go. But, one question...for all...most Nonni add the egg as You did. An old uncle would mildly beat them (not full scramble) with a healthy drizzle of olive oil drained from a can of quality tuna (which he then used for a salad or separate sauce/pasta.) Just conversation, not recommendation.

Awesome looking recipe. I like the emphasis on fresh herbs, ricotta, and baking them. Oh, and grating the onion as well. I’m on a quest for the perfect meatball so I will be giving this a try.

Great recipe! I’m gonna try it. One minor suggestion, when baking…turn the meatballs over at 14 minutes with clean tongs. Makes for an even better thorough cooking. Oh, and the flat pan you used is called a brazere. (Meaning “to braze”)

Great recipe. Putting 4:36 onions in fridge before processing will make them less strong. Or won't burn your eyes

May I suggest you scoop them all out, THEN roll them all? So much faster than up and down, up and down, plus, your hand only get yucky once. Scoop, roll and then wash hands. Great job!

I just finished making the Meatballs a couple of Hours ago. I can't Stop eating them. They Truly are the Best, Most Moist & Flavorful Meatballs I've ever Made. The recipe Yield me 28 Good size Meatballs. Bethany Thank You so Much for sharing your Family Recipe with You Tube. This will be my Go to Meatballs for now on. They are so easy to Make. I did Broil them for 7 mins after Baking them for 20 mins. They came out Perfect! Thank You so Much

I wish I could comment privately because it is kind of jerky to suggest cooking techniques to a cooking channel. That being said, I made meatballs like this with very rich meat for added tenderness. This gave me leeway to use the broiler to brown both sides of the meatball. I used tongs to flip them. Also, you are a cute couple. My wife and I send our regards.
