As 7 footer you are better off playing basketball in the first place with additional advantages of being less dangerous for your (longer term) health and that it's financially more appealing to go to the NBA than the NFL with better guaranteed deals, higher salaries and no positional discrimination.
TE (which seems to be the most common former basketball players turned NFL players position nowadays) vs the 7 ft position in the NBA, Center, is a gigantic gap in pay.

Naybe the reason we havent seen anyone since is that tall athletic people tend to be guided towards other sports that would benefit more from the size like basketball

Honestly, football is probably not the sport for super tall people. Considering they can break their own legs wothout help, not great for combat😬😬😬
It's because with that much height you lose mechanical leverage and the center of gravity battle..and injuries to legs that long is obvious...
