    Guga try onion juice for marinate. It works as pineapple juice but gives great taste.

      They use onion juice, yoghurt or milk to marinade, i am curious if they really soften the meat and if yhey do how much do they tenderize the meat.

    I love Ceaser dressing so I'm bummed it didn't come out better.
    BTW, my favorite is the one and only original: Cardini's
    If you try other dressings as marinade give Greek dressing a shot.
    It's used at a local Greek restaurant on their Souvlaki (marinated beef & chicken) and quite tasty.

    Glad you guys did this one. As long as I can remember, bottled salad dressing was the bachelor's marinade secret. I first used it over 30 years ago. Nice to know it works with sous vide.

    GUGA! You should try adding blue cheese to a steak before cooking to give it a dry aged flavor. Some funkiness from the cheese could be good! Maybe leave it overnight for a few days in the fridge and then cooking it without the cheese on it? Maybe make a sauce with the cheese you took off before cooking?

    where i live in northern spain the most typical meat dish is 'solomillo con queso picón' which is sirloin with melted cantabric blue cheese on the top, in the shape of a sauce or just melted down with the heat of the meat, you should try it out. We also have always as side dish good french fries and confit or baked red bell peppers with garlic

    How about a steak and cheese experiment. Normally cheese got a lot of fat which renders out when warmed. Wenn you cook a steak sous vide with different kind of cheese slices on it, the oil from the cheeses can flavor the steak. I think of blue cheese, Parmesan, Camembert, Mozzarella, old gouda.

    We want ”swedish jacuzzi”, it means that u dry age meat for atleast 30days. Then cover in butter or beef tallow and age for 20 more days

    Hi Guga, two things.
    1) When you marinade with pineapple and struggle to get a crust smear Hot English Mustard lightly over the meat after you have patted dry and then sear the meat - it creates a yum crust with no mustard flavour.
    Which brings me to No. 2
    2) Please try a mustard experiment with American, Hot English, Dijon etc.

    I used to marinate meats in those dressings many years ago. The Italian was great for pork kebabs. Blue cheese dressing is good for a sliced beef salad.

    Really liked this test ! I've used all of these but Thousand Island as marinades, and just marinades... not sous vide yet... I only got a sous vide recently and need to finish the instructions ! Will add that on the bleu cheese dressing ( and I DON'T like bleu cheese btw ) that it is really good to put it inside the steak in a pocket. Get a narrow bladed filet knife and cut thru a small hole at one end, so you can have a large pocket inside with only a small hole so everything doesn't squirt out too easily. When it is cooked, bleu cheese is actually good, and totally different tasting from the uncooked cheese ! Try it as a stuffing sometime Guga. Maybe try stuffing a few different steaks with cheeses, nuts, breaded stuffing, maybe pre-cooked shellfish like crab or shrimp/lobster ?

    Heinz 57 & Italian 50/50 mix makes an amazing marinade. I have been using it for years and it always surprises everyone. Not sure how good it would be sous vide but I am going to give it a try now.

    Cubed Chicken beast marinaded in Italian dressing overnight, then skewered and grilled, is INCREDIBLE. You can also use it to marinade potatoes and grill them on the same skewers

    Not for sous vide but I love marinading steak tips in one cup (zesty) Italian dressing, one cup ketsup, one can of coke, and seasonings (salt/pepper/garlic power/onion powder/whatever else you want). I usually let it marinade overnight but even just a few hours is great.
    This marinade also works fantastic for chicken thighs, turkey, and I'm sure other meats as well.

    Please consider re-doing this experiment the way you did the Worcestershire experiment: Vacuum seal and marinate them in the dressings for 2 hours, then remove, wipe, season (S/P), re-seal, and sous vide.

    Guga, can you try that trick of comparing a New York strip sliced against the grain against the same cut sliced the way you normally slice it?
    Cut the strip in half to see which way the grain is aligned, then slice each of the halves on a bias so that the slices are across the grain.
    I'd love to see you try one sliced the way you normally slice, one sliced this way, and see how much slicing against the grain changes the texture.

    Hey Guga, try Lawry's orange seasoning salt, pepper and French dressing on chicken or pork steak (like pork butt steak or pork shoulder steak). It may be a better fit for Guga Foods as you don't want to wipe off and eliminate all the French dressing from the surface, you actually want a bit on the final product. So season the meat and then put dressing on all sides and let it sit and marinate, then cook it indirect heat on your Webber, basting with fresh French dressing once in awhile. Give it that quick sear at the end and you will end up with super delicious chicken/pork.

    Good day! I just hope you can try the sous-vide adobo pork short rib. Best when slow cooked. Filipino delicacy, very flexible cooking options basically it consist of soysauce, vinegar, salt, pepper, a bit of sugar and laurel leaves. Optional ingredients are coconut milk or pineapples, and many more, we can search google.

    Try to marinade Beef steak in this marinade : 1 1/2 cups cooked black or green tea (best is Dajerling)
    2 teaspoons stone ground mustard
    1 teaspoon Dijon mustard
    1 tablespoon fresh marjoram, roughly chopped
    1 tablespoon fresh oregano, roughly chopped
    2 tablespoons extra virgin olive oil , mix all ingredients and put raw steak in marinade in zip bag and in refrigerator for 24 h. remove marinade from stake, klen and pet dry and put on BBQ.

I like to eat ranch burgers and at times I like to dip my stake in ranch dressing. I think you man enjoy and I'd like to see your face when you do try it.     Wish bone Italian dressing and pineapple pure for thanks giving turkey, I usually use about 2 pineapples, 2 large bottles of the dressing and top the rest off with water (only to cover the turkey! It’s soooo good lol

    Guga, we marinate Flank Steak in that WIshbone Robusto Italian dressing for at least 24 hours all the time and cook it directly out of the marinade onto the hot grill, and it comes out INCREDIBLE! Definitely give it a try!
