How To Make Kedgeree | A Easy Asian-Spiced Kedgeree Recipe

  • This week I'm diving into a lovely breakfast dish called Kedgeree, this has some wonderful smoked haddock with fluffy rice in a rich, creamy sauce with some background heat. Softy poached eggs are the order of the day as well, enjoy this wonderful recipe.
    Ingredients-
    ➤ 350g undyed smoked haddock
    ➤ 150g basmati rice
    ➤ 3 tbsp chopped parsley
    ➤ 3 eggs, softly boiled For the curry sauce
    ➤ 30g butter
    ➤ 2 shallot
    ➤ 2 cloves of garlic
    ➤ ½ tsp ground turmeric
    ➤ ½ tsp ground cumin
    ➤ ½ tsp curry powder
    ➤ ½ tsp fennel seeds
    ➤ A few curry leaves
    ➤ 150ml fish stock
    ➤ 300ml double cream
    Recipe-
    1. First make the curry sauce. Melt the butter, then add your shallots and garlic. Allow these to soften but not to pick up too much colour, then add your spices starting with fennel seeds, cumin seeds, then the turmeric, curry powder and curry leaves. Add the fish stock, reduce and then add in the cream. Once reduced by half use a blender until smooth and pass through a sieve, adjust seasoning.
    2. Poach the smoked haddock in a pan of gently simmering water which has been lightly salted. Poach for 3-4 minutes then allow the fish to cool in the liquid. Once cooled, flake your fish.
    3. Rinse rice a couple of times to remove starch, then cook per packet instructions, let rice cook, then drain and let it steam for a few minutes. Also, gently boil your eggs, once cooked, peel and chop into quarters.
    4. Now add your rice to the creamy sauce, and warm through, add the haddock and serve. Garnish with chopped parsley, and the softly boiled eggs.

    This sauce looks amazingly good! I am unfortunately allergic to fish and seafood , so, no smoked haddock for me. :( I have a brother-in-law who's a master at grilling and smoking, so maybe he could smoke for me some chicken breasts, and I could swap the fish for some chicken (same with the stock cube : chicken cube would surely work too)?

      Oh yes I think that would work well, shame fish isn’t for you but chicken would be a good substitution I think. It would be a different type of dish but why not
