My best friend in school was from Okinawa. Their mom would make them taco rice for lunch and I loved it. She would pack an extra bento of it for me because of how much I enjoyed it. Such a good memory.

Within 1 minute of watching this video I thought "I'm gonna make this dish", walked into the kitchen, REALISED I had all the ingredients, and sat down to literally the most comforting, simple yet delicious meal, all within 40 minutes. Japanese food simply amazes me with its complex simplicity, and to you sir Adam Liaw, Thank you very very very much for sharing your talents with us and inspiring tastebuds, millions at a time :)

Between Okinawa's taco rice and Korea's bute-chige, it's amazing how Uncle Sam's surplus has influenced the cuisine of the modern world--and how yesterday's desperation food becomes today's comfort food, a phenomenon that repeats itself throughout history.

I was stationed on Camp Courtney from 1997-2000 and this was my second favorite dish. My first was teriyaki chicken donburi. Also, the absolute best tacos I've ever had in my life was from an Okinawan taco stand right outside the night club we frequented on the weekend. I think I'd make another trip back there just to have those tacos again. The quality of beef there was far superior to anything I've had in the States.

Since stationed in Camp Hansen back in 2001 (left the day after 9-11 which will forever be ingrained in my life), I have been making Taco rice and cheese as served in Parlor Senri, just outside the main gate of Camp Hansen. Now, near 20 years later, I am still making it. Have a teenage daughter who I have spread the love for international food with, and her friends who, if you know teenage american girls, eat nothing but cereal, love it when they come over and have specifically asked for me to make them "taco rice and cheese". This is one meal that after you make it you will be in love with. Simple, easy, and amazing tasting. Never had anyone complain when making it for them. And it is what taught me to eat with chop sticks. Imagine, 21 years old, foreign county, been drinking (party bowls) with fellow leathernecks, and want something to eat. Parlor Senri fit the bill with cheap, filling food, but was served with chopsticks. You learn to adapt fast of hate the coming morning.
Thank you so much for the step back in time and some good pointers at making this dish. I am going to make your teriyaki sauce and chicken this upcoming weekend. To all those on the fence over this meal, just make it. It is one of those dishes you would have wished you knew earlier. It truly is amazing. Thank you Adam.

Was there in 92, barracks were right off the water, the taco and rice was crazy good, plus the fried chicken, those pieces were huge, some
one swore they were dog legs but so good. We ate at one of the restaurants/home, one of the best served meals we ever had better than
anyplace around Tokyo, the rice, seafood, and the tempura, I to this day have yet to taste anything comparable. After our meal, the sever
did a traditional dance for us, it was amazing, that was our last weekend there, it was so memorable. I really enjoyed Okinawa to it's
fullest, I even got my dive cert there, such clear water.

My introduction to taco rice was at My House restaurant just outside the gate of MCAS Futenma around 1995. I tried it at a few Japanese restaurants in the states and it was made more like this recipe. It never hit the spot because it seemed more like rice with a salad on top and some meat sprinkled over that and it was hard to eat unless you used a spoon. I decided to make it on my own, to replicate the way My House did it, and I am much more pleased with the result. The main difference being, make a bed of rice, add a layer of cheese, then a layer of meat, then add the shredded lettuce, and finely chopped tomatoes on top. This method stays together much better, so you can easily eat it with a fork or chopsticks. I also use tomato sauce/ketchup/water to make the taco meat kind of saucy, so it easily melts the cheese into the rice.

This is a nice spin on a classic dish any Marine or Sailor who's been to Okinawa knows and loves. In 1991 outside the main gate of Camp Hansen we'd grab TRC and there was no lettuce or tomato. It was just a bed of rice, seasoned meat and cheese melted on top. This with a Sapporo or Kirin is the perfect food after a night of fun in Kin. S/F

I've been trying to replicate the simple shrimp fried rice from my favorite place outside of Camp Hansen(1992) for 25 years now. I watched the old couple make it 100 times and the only thing I have not added yet is Dashi.. I did add Sake once and seemed to be close.... I will make the chili Vodka also which they may have used. I will make this Taco rice as well. Funny I never ate this while i was there, but I gravitated toward grilled squid and my go to fried rice and a lot of alcohol. lol I've been all over the world and this is my favorite place on the planet so far.

The Okinawan rice at Jet City Burger is the best! The difference is that the steamed rice is fried in oil in a individually sized cast iron pan until crispy on the bottom, then the meat, cheese, lettuce and tomatoes are added on top of the rice. The rice that is crispy is like the crispy taco. The best ever.

Back in the 80s out of Gate 2, BC Street, there was a place called Ocean Tacos. My one regret in life is that I did not eat more of them. 😢. I remember the taco meat being slightly spicy. Not much, but a little.

    Hi @adam Liaw,
Love your videos and all your cookbooks - congrats on your newly released one!
There's so many things to say, not sure if you actually reply to your comments but it's worth a shot!
Thanks to you, I've been thinking about nutrition a lot. I think about the soda, bag of chips, instant noodles that are virtually nutritious-less and not even that satisfying. I know in the future, when I have a place of my own, I am going to incoporate many of your recipes to begin a life where the food is delicious and nutritious. (what a shame that fresh seafood is hard to find...and seaweed!)
I love your large wooden board, does anyone know where I can find one? The ones I find, though large, are made up of many small peices stuck together, I can't find a large slab of wood.
But, about your videos, why are they shot so... cool? as in the tint/saturation, I had thought it was only the older videos but it looks the same. It doesn't really bring out the warmth of the food.
A huge fan, your wife is lucky!

Hey Adam, that is a beautiful pan you make the beef in. Any tips on where to get something like it?

Taco seasoning commonly also has some cinnamon and cloves.
