Zombie - A killer Tiki Cocktail

- Legend has it that Beach made the very first Zombie Cocktail for a hung over customer who needed to get through a long business meeting. So the first one was used as a Corpse Reviver style cocktail (HA!). The cocktail Beach made contained so much alcohol, disguised by fruit juice that the customer complained that the drink had made him a Zombie for several days. In fact when it went on the menu, customers were only allowed a maximum of two. The Zombie was a hit and soon other tiki establishments which began to pop up tried their hand at their own versions, but since Beach was notorious for making proprietary mixes whose ingredients were kept secret, everyone had to try and decode the mix. So now we have several different recipes for a Zombie over time. Thanks to the work of Jeff "Beachbum" Berry who worked tirelessly to decode Beach's recipe, we believe we have the Original version here. I will, though, as promised, shoot all the versions I know. And for more info on it you should definitely check out Jeff Berry's book Sippin' Safari. Hope you guys enjoyed the video and definitely enjoy the drink! Cheers!
Note On This Video: The Original recipe calls for 6oz of crushed ice and to be placed into a blender and blended smooth, so do that if you feel like it. For this video I decided on a whip shake/pebble Ice presentation.

For those of you who don't know, Don's Mix is Donn Beach's Super secret combination of Cinnamon Syrup and Grapefruit Juice. Here's how to Make it:
First combine 250 grams White Sugar with 250 grams Warm Water. Add 3 sticks Ceylon Cinnamon and simmer for four minutes. Take off heat and let sit 24 hours after which strain out the solids. To make Don's Mix simply add 2 Parts Grapefruit Juice to 1 Part Cinnamon Syrup. The original was made with White Grapefruit Juice but I prefer Ruby Red. - Jak na to + styl
Had these on a limited tiki menu I did for a friend's party. Everyone waited for the zombie and too many people passed out early on in the night. Great drink.
Seriously, you make some of the highest quality content there is!
I just discovered your channel in the last several days, and I'm addicted. I love the simplicity of presentation and the bits of history. Well, that, and the delicious drinks.
7:13 "Sippy cylinder." Shout-out to Cocktail Chemistry!
Tiki drinks sound like a giant investment in all the different ingredients. I feel like I need to graduate from classics, build my bar then do Tikis eventually
The trick to tiki is keeping everything simple and making your own syrups.
1. Buy an aged Jamaican rum like Appleton Estate to use as the base spirit (don’t bother mixing rums at first)
2. Use fresh limes
3. Make your own syrups (grapefruit cordial, orgeat, falernum, passionfruit, grenadine)
4. Start with daiquiri riffs, then get creative (Mai Thai, Hemingway, Hurricane, Planters Punch, Zombie).

Great video! We used to start our day with a pre-shift Zombie to get ourselves going. One of the best cocktails, ever!
Wasn’t expecting this but happy to see it. I’m especially excited about the Zombie progression you are planning. I hope you explore what was behind the evolution to the newest version.
Another amazing recipe. Will need to grab some stuff and make it at home! Thanks very much for your great content!
I was just searching all your videos this weekend for a Zombie, then here it is. Great video, now I want to go down to the Bali Hai for a Zombie.
Just a quick note about the blender technique: it’s extremely important to measure your crushed ice like Leandro mentioned. Also, use a technique called a “flash blend” where you just pulse the blender for around 5 seconds just to chill and dilute the drink quickly, rather than making a slushy
Thanks! This is one of my favorite cocktails
Thanks for the Video! Love seeing the Lemon Hart & Son 151 in use
Dons Mix is cinnamon syrup and grapefruit juice. I did not see you mention that. Also, when I mix these, I move all of my bottles off to the side as I go so I can keep track of what I have poured. Not wanting to double up or omit something by accident. Typically I mix "Jet Pilots" as they have half the rum and a little less of everything else for balance, but it is the same drink. The blending should be done with a Hamilton mixer, flashed as it pumps air into it and creates a froth. Not a typical blended drink. This is one of my favorite cocktails.
I have not yet dove into the ocean of tiki cocktails. They just contain so many unique ingredients
His little “See ya” was so unexpected and cute 😂
very nice! one of my favorites!
Hey buddy, aloha from maui. just discovered your channel. Thanks for all you do for our beverage community 🤙🏽🤙🏽🤙🏽 shit is funny how you usually forget something. 😂 aloha braddah.
Cool series idea
Honestly man, thank you for sharing your knowledge on this platform. Love your channel, recipes and your chill attitude!
Love it..u‘re kinda like me..i also have a tidy mess at home^^nobody finds anything but i find every little thing💪🏼💪🏼
Gracias por leer mi comentario y por realizar el trago que te pedí, me gusta mucho tu canal
I remember being a young bartender starting out in 1979 and my first Zombie was simply made like this - - - (Built): 1 1/2 oz Dark Rum, 1 1/2 oz Wh Rum, Orange Jc, Lemon Jc, splash of Pineapple Jc, and top with Apricot Brandy.
was good to see you with Spike in his "breezeway".
Dude you rock I made your Whiskey sour thinking id use a few eggs with company at the Buck Wallow Lodge and next thing you a dozen eggs later every one loved them, also your Wisonsion Brandy old fashionds are amazing keep up the outstanding work your a tru master at your craft
Thank you!!!
Love it! I wish I could buy an overproof demerara rum around here so I could make a proper one. Right now I sub in like 2 oz. of El Dorado 12 for the overproof rum.
I barely remember my first zombie recipe, but it was WAY off from this one! Basically a really sweet, really strong mess. This and the Smuggler's Cove recipe wins!
Crushie poo and a slappa lappa ding dong. Gotta respect a grown man using those words. And English is not even my first or second language :-D
If you are going to make more Zombie variations I would love to see the Charles Schumann version out of his book Schumann´s Bar (guessing it´s American Bar in the US).
The recipe is:
- 4 cl Lemon Juice
- 2 cl Blood Orange juice (freshly squeezed)
- 2 cl Pineapple Juice (freshly spueezed)
- 0,5 cl Grenadine
- 1 Bar Spoon Icing Sugar
- 6 cl brown Rum
- 2 cl white Rum
- 2 cl brown Rum(overproof)
- 2 cl Cherry Heering
Let's me 6 of those please! And 2 more of those Pink drinks you just made lol
Ok just created my first real zombie and it was epic! According to martin cate instead of 6 drops of absinthe its 2 dashes of herbstura(a mix of herbsaint and angostura bitters). I could not find herbsaint and just dashed some angostura. I found that upping the falernum to 1 ounce to be more rounded but thats just my personal preference. The question is, do you believe absinth+angostura bitters mix would bring better results? since herbsaint should be an anise based spirit?
That cocktail looks like it'll put hair on your chest. I have to find it.
This is me not forgiving you
Nice cocktail and story though. I need to get my hands on another bottle of absinthe...
A clarified zombie sounds so good
Love it! More tiki 🗿
Living in Australia, it's more or less impossible to get 151 Rum other than Gosling's via Nick's. Ideally I would have Lemon Hart for my Zomies and Jet Pilots etc
Jack007 plantation OFTD is a decent sub
according to a standard cocktail ABV formula, even if you only use 80 proof rums in this, the final abv will still be 20-25%. with the 151, its closer to 32%
Always love me a Zombie! :D
Nice video, friend.
Gotta work for this one!
This is definitely DON APPROVED ... lots of ways to make a zombie nowadays... only 1 bar where I live actually makes it Don's way.
This was very popular in the mid to late 80's in the Philippines.
On a Tiki kick, anticipating the arrival of my Hamilton Beach. It is kinda strange watching these older videos without the Marius interaction.
YES ive been waiting
At the bar I work at, we set our zombies on fire.
Ah my go 2 drink
Don took ALOT of credit, for the drinks Alberto Cruz invented at the Beach Combers in Hollywood
3 of these over the course of a couple hours is the shit ......
I see u Mr. Hulk
Dons mix is what orange grapefruit any fruit juice yes
Give it a little crushy poo and a little shlapa lapa ding dong. 😂😂
When are you going to release more zombie variations as promised?
"For those of you who don't know what Don's mix is...."
We still don't know what it is, except it contains grapefruit. Is it just a grapefruit juice/simple syrup mix? Something else added? Would be nice to know!
it's cinnamon my friend :)
@@jurajschlosser8004 just saying that a recipe for it in the description wouldn't have gone amiss!
Grapefruit juice and cinnamon simple syrup
Don’s Mix is a mixture of grapefruit juice and cinnamon syrup. To make it, mix 2 parts grapefruit juice (historically white) and 1 part cinnamon syrup. If you want something a little sweeter go 1:1. Hope that helps
@@dillonmcgraw7011 cheers mate, all clear now!
More zombies!
going to try the 1934 Zombie St pattys day
Love a good Zombi...
Is it ok if we make Dons mix with Demerara sugar??
That's for one serving? 😵
What absinthe are you using?
And no one has any of those at most regular bars lol. “Hey barkeep do you have Don’s mix here?”
You're going to the wrong bars :) It is a specialty ingredient, but any decent bar that do Tiki drinks should have it.
Hulk. I see you.
you mix the grapfruite with cinamon for the don mix #1?
I make a grapefruit cordial (equal parts sugar to grapefruit juice) for this and the Hemingway daiquiri. When making this drink, add 1/8 tsp ground cinnamon before blending.
Another great video. Wholeheartedly agree with you regarding open sourcing drink recipes. Nothing says douche like a bartender who acts offended if you ask him (or her) for the recipe of a drink you just paid for and are enjoying.
Regarding the blender, it’s not a traditional blade blender, but a drink mixer/milkshake mixer. Donn didn’t use shakers or blenders, in the traditional sense, he only used drink mixers/milkshake mixers/spindle mixers, whatever you wanna call it.
I am fully aware that beachcomber used a drink mixer a la Hamilton Beach, but he was flash blending because he was using crushed ice. I am using pellet ice which is a much different thing. Not sure that using a drink mixer will make a superior drink. Im going to put this to the test!
The Educated Barfly it definitely will. I make tiki cocktails at home regularly, using pellet ice and flash blending the majority of the cocktails I make. It makes a world of different in the dilution and aeration of the cocktail.
David Phantomatic well I’m definitely putting it to the test. Tiki is something I haven’t really worked at in all the years I’ve been knocking out classics I decided to perfect it on this channel with you guys as my witness. My intention is to make every tiki cocktail published. I will definitely put the Hamilton beach through it’s paces and make a video on it.
Have you made it with the white Grapefruit also? Or have you made it just with the red and are happy with it?
I've made it with both. Prefer the Ruby red myself but its great both ways honestly.
Hey Leandro - i've spent weeks now unsuccessfully trying to score velvet falernum for all my summer tiki drinks. can you speak on a recommended substitute syrup and ratio for those of us in the same boat?
Last summer I made my own falernum following this recipe, and it turned out great!! I would suggest you try it.
www.seriouseats.com/recipes/2012/02/homemade-falernum-for-tiki-drinks-almond-clove-lime-syrup-recipe.html
I would also suggest making your own. Never tried the recipe Dillon McGraw posted, but falernum #9 (with a little less lime juice) is a really nice one and it's quite easy to make. Just google it, definitely worth it!
Make your own Syrup. I'll do a video, but follow the link from Dillon McGraw so you don't have to wait LOL
No, the title gave it away.
It's not a blender drink. Don did not have a blender at his establishments. He used spindle mixers.
Not the falernum, not the 151, just the fact there's like 8 ingredients on the counter.
The pebble ice you used looks like you took it from a commercially available product...where did you get it
It's Névé Pebble Ice that we bought at K&L Wines
Should have added some Cranberries.
What's all is in the Don's mix
Don's Mix recipe in the description
The drink is very strong to go it's a short of a long drink.....
Shaking with crushed ice 🤔? Not what I would have done
Next up... Don's Pearl Diver??
c ya
So to be clear “Dons mix” is just grapefruit juice? You say juice and syrup but never specify what syrup its mixed with
i saw in other videos Don's Mix #2 is 2 parts of white grapefruit + 1 part cinnamon syrup....could use red grapefruit i guess (sweeter).
THOSE GOLD SHAKERS FREEZE UP, THEY ARE THE WORST.
Cinnamon syrup??
Like, are you questioning its use or can you not comprehend what it is
A question to any Americans in the comments: Why is the Zombie so hard to find in the US? Or is it just Austin where I recently moved to? I come from a European country and you can find a zombie at basically every bar that makes cocktails, even if it's not a cocktail bar...I've been in so many bars in Austin, and only 2 of them have it (one being a pretty upscale cocktail bar). Even in fucking New York, I couldn't find a zombie and I went in 5-6 different very nice cocktail bars there, none had it...Is it just dead in the US now? Am I just unlucky?
Because you are in Texas. They don't drink cocktails down there.
I think you’ll be more likely to find a proper one at upscale coastal bars. Too many ingredients and not worth the time making for busy/cheaper bars.
Any chance you can whip up a Pearl Diver? Not many videos out there and gardenia mix just trips me out a bit.
Yep. Just waiting on the proper glassware and I'll do it!

Used to hit these drinks at da club back in the day. The idea was to get the most for my money as a college student. LOL. Boy, did I have lots of blackouts and hangoevers due to this dangerously flawed philosophy.
Holy cow ,I bet you can taste the diabetes in that drink. Lol
I don't think this drink would revive me, I think it would put me in my grave for good
Are zombies supposed to taste good? Every really upscale really authentic tiki bar I go to I order a zombie and it always tastes terrible completely unbalanced way too strong (and I like strong drinks) and just seems like something is missing. Are all these places just messing it up or is it just a crappy drink that people only have because it's a classic and it has a bunch of liquor
Not adding enough dilution more than likely. 4 shots of rum needs enough liquid to balance it out. This is why I prefer frozen with plenty of ice over flash blending. That or maybe just use a normal amount of alcohol.
Love the Zombie cocktail but this recipe is way too strong for me. Vote for more tiki cocktails :-).
You talk to much before doing it make your video too long for one cocktail
I entirely disagree. I find the videos informative & entertaining throughout.
