RECIPE: adapted from sallysbakingad...
➢ Ingredients for cake:
4 large eggs, separated
2/3 cup (135g) granulated sugar, divided
1 tbsp strong espresso
1/4 cup (60g) unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 cup (62g) all-purpose flour (spoon & leveled)
3 Tablespoons natural unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1. Beat egg whites & half (1/3 cup) sugar together until stiff peaks form
2. In another bowl, beat egg yolks, remaining sugar, & vanilla extract until pale and creamy
3. Sift dry ingredients into a large bowl. Pour butter, coffee & egg yolk mixture over and mix until completely combined.
4. Gently fold in egg whites until barely combined (avoid deflating!!)
5. Spread evenly in pan. Bake for 10 minutes, or until top of cake springs back gently when touched.
6. Immediately invert onto parchment paper. and peel the paper that was on the bottom when baking.
7. Let cool completely, then cut into desired shape/size (mine was 3.5 inches in diameter)
➢ Ingredients for cream cheese icing: (I would double this)
Cream cheese 150g (room temperature)
Sugar 40g
1 tsp vanilla extract
Heavy cream 150g
1. Whip cream cheese until soft and fluffy. Do same with heavy cream.
2. Add vanilla and sugar to cream cheese, beat until completely incorporated.
3. Fold in whipped heavy cream until combined.

Girl, the cloud one looked really nice, I can tell you put a lot of care into the decoration details. Your only problem is the frosting turned out that way because you overwhipped the heavy cream, otherwise it would have been smooth. I bet both still tasted good, tho, so don't beat yourself for it 😸

@@dobochobo in fact you can fix overwhipped cream by just adding a bit more cream and then beating as needed, then it can look a bit smoother

when you are a pastry/cake chef daughter and you know everything could've turned out better if they used different techniques that makes thing easier but you still like the process so you watch it all over again

@@SusuUItra to be honest you can use any type of cake you like best as well as the cream there are many types and not everyone likes the same type i personally like butter cake and cheese cream and im good at making it so i would only have to make it smaller, so do something you like and know how to make but smaller and that would turn the best way it could and never and i mean never over over whip something wither its cake mix or the cream mix it ruins the texture but i was talking about how to actually assemble it, it would have been easier for her to use certain tools but not everyone who isnt interested in baking has these tools since they see that its a waste of money if you are not gonna use it regularly

They came out looking beautiful! Kind tip: Cakes are fragile when they are still hot, so I would suggest waiting till it cools before flipping it and cutting it! ❤️❤️

lmao I think the reason the frosting at the end looked like cottage cheese was because u overmixed it 😅 the heavy cream prolly started becoming butter

these looked so cute !! just so you know, the reason why the frosting looked like that is because you overwhipped the cream. once the cream has thickened quite a lot but isn't quite holding its shape, you wanna be super careful because it will start to curdle really quickly!
