I’m taking my notes right here, lol
Wilt the spinach and purée it
Cinnamon, 4 cardamom, cumin
2 chopped onions
Ginger and garlic, grated
2 chopped tomatoes
15 minutes
Spices: salt, turmeric, chili powder, Garam masala, ground cumin
2 tins chickpeas
cook down to soften and meld flavors
Add the spinach purée
Bit of sugar
I made this tonight for my wife and it is absolutely delightful! A huge thumbs up to this delicious recipe. The whole house smells fantastic. I'll be trying every vegan recipe you post, Chetna!

Chetna, my partner's son is very hard to please when it comes to food. Whenever we have a takeaway curry it's either "Okay" or "not very good". I don't think I've ever heard him praise a meal. I cooked this last night, I didn't liquidise the spinach, I just wilted it down and added it. I served it with brown rice, Andreas tried it. "Actually this is pretty good." I was delighted. That is praise indeed from that young man. He had the leftovers for dinner this evening too. I really appreciate your videos, thank you for posting them. I've got both of your books. from Paul.

This looks great! Thanks for this lovely recipe Chetna. I learnt a GREAT new trick to cook chickpeas in 15mins without a pressure cooker. After soaking, put chickpeas in a pan with a TSP of baking soda, stir and then add water to boil. It's a method from Ottelenghi! It's really a time saver.

Made this today with a couple of changes and it came out so good I can't take the taste and texture out of my mind. (Added some kale leaves and cilantro to the spinach and topped with "requesón" something between cream and fresh chesse) So delish!!

I just made Aarti Sequiera’s saag paneer last night and that was not the business.. lol i know these are two different dishes but i think this is that creamy spinach dish that my preggo belly has been craving!! Where were you yesterday!! Lol
I made this last night. I was a little short on spinach so I added grated zucchini (courgettes) for more veggies. I also tossed in some paneer. Sooooo delicious! Thanks, Chetna.

4:45 That bright green spinach colour is *out of this world!* I'm looking to make this tonight and would like CZcams hive advice: If I add paneer near the end, should I adjust any of the spices Chetna added with the onion mix?

This is NOT a criticism but an honest question. Could you use the water in the can of chick peas?
Yes you can if you wish to
One thing you can use the liquid for is substitute it for egg whites in baking if you are vegan, whisk it up real good it turns into a nice frothy consistency like egg whites, its a trip but it works!
Except for the spinach puree, this looks like it tastes amAAAZZZing! Will probably make it adding fresh leaves at the end, or even in individual bowls at serving. (Yes, I will make it according to the recipe the first time I try it, but am not looking forward to pureed spinach!)

I’ve noticed that vegan or vegetarian people don’t have a significant muscle mass.
You use spinach in sooooo many recipes, but I would really prefer a different type of greens, but I just don’t know what might taste right in the recipe. Any suggestions?
Any other mild tasting leafy green would work. Although I would say spinach is already mild and it's easy to cook. Other greens like swiss chard tend to always remain crunchy no matter how long you cook. Depending on the recipe you can skip adding greens entirely.
