    Shopping List:
    1 12-15 lb Turkey (Defrosted)
    1 cup of Brine Mix (Kosmo's or whatever brand you like)
    2 Gallons of water
    1 cup brown sugar
    1/4 cup hot sauce
    1/4 cup worcestershire sauce
    4-5 cloves of garlic
    2 oranges
    1 lemon
    2 onions
    4 stalks celery
    4 tbsp chicken base (better than bouillon)
    2 cups chicken stock
    fresh herbs (rosemary/thyme/sage)
    1 1/2 sticks of butter
    cajun seasoning
    salt, pepper, garlic, onion powder, italian seasoning
    2 gallons peanut oil (if frying)
    1 cup chicken stock & 1 full scoop bird booster injection marinade
    Directions:
    Defrost Turkey and remove giblets, neck, and any plastic. Clean based on your preference. Boil 1 gallon of water and add brine mixture along with brown sugar, hot sauce, worcestershire sauce, 2 oranges, celery, onion, chicken base, garlic, and fresh herbs. Bring to a boil for 5 minutes and stir. Turn off heat and add ice. Allow this to come to room temp (add 1 gallon of water to this solution) Submerge turkey in brining liquid and keep cool for 24 hours (fridge or cooler)
    After 24 hours, remove turkey and rinse/dry. Make injection by mixing water with injection mixture (OR use Tony's store bought creole butter injection) Inject Turkey evenly and then season generously.
    If Deep Frying, fill fryer with peanut oil and get oil temp to 350 degrees. Deep Fry turkey for 3-4 minutes PER POUND or until it is golden brown and white meat registers 160-165 and dark meat is at least 175.
    Oven Method:
    Preheat oven to 325. Inject and season turkey as seen above. Prepare your roasting pan by adding chicken stock, butter, herbs, veggies, and chicken base. Place turkey on roasting rack and tuck wings. Stuff cavity with remaining citrus and veggies/herbs. Tie legs together as seen in the video.
    Roast in oven at 325 for 12-15 minutes PER POUND. After 1st hour, begin basting Turkey every 15-30 minutes. Once it registers 160-165 in the white meat and 175 in the dark meat, it's done. Allow it to rest for at least 30 minutes before carving. Enjoy!

    I'm about to break out into singing Dora the Explorer "We Did It🎶!" I have shown at least 6 recipe tutorials to my sons & they are now fans👍🏾🤟🏾 They dig everything about the techniques & guidance given during video. Lol even commented, "Dude got a cool accent we can listen." They've made 2 of the recipes so far followed word for word & it was actually delicious & eatable lol..     I have used Tony's and fried our turkey twice years ago and it is the best turkey I have ever had!! It was crispy and just delicious. We cooked it in Peanut oil 🛢 outside on the porch. Very delicious 😋

    The brine mixture used in this video looks very flavorful. I use a maple and bourbon brine (plus other ingredients of course 😅). It turns out perfect 😋 my mom begs me ever year to make it, that and a lavender turkey I make. Both of these are her favorite. But I'm curious to try Kosmo's brine mixture and your add ins, because your brine looks on point 👍 intense flavor.

    Can I use a regular pan? Only have one pan that has the roasting rack and I'm making more than one turkey this year. So I'm wondering if I can make in the roasting pan and one in a regular pan or aluminum pan

      Yes, you will want to elevate the turkey though... maybe lay it on a bed of herbs and veggies

    so i bought everything i need but couldn't find a brine mix at grocery store any suggestions also is there another way to bypass the injection process like is it really necessary.. or can i just use some butter and seasoning on the turkey ???

      I would highly recommend the injection and you can make your own brine if you want 2 Gallons of water
      2 cups of kosher salt
      2 cups brown sugar
      2 tbs garlic
      3 tbs herbs de provence
      1 tsp allspice
      1/2 tsp black pepper

    How do you feel about buttering the turkey after the brine and mixing in fresh herbs and what not? Will it make the skin less crispy? Or do you think it’ll throw off the taste? Pretty new at making turkeys still 😂

      I have done them that way and they're good but I feel like it makes the turkey skin cook unevenly.. tastes good but not the best presentation

    I have turkey legs and wings as we do not like the whole turkey. Is it okay to put our turkey wings and legs in a brine? How will I reduce the ingredients as the total weight is not more than four pounds. Thank you,

    It's too late for me to find kosmo turkey brine. What else can I use? Like kosher salt, adobo, sazon? I couldn't find turkey paste pasta either, what can I use in replace of this?

      Chicken base instead of turkey or chicken bouillon cubes...
      Brine.
      2 Gallons of water
      2 cups of kosher salt
      2 cups brown sugar
      2 tbs garlic
      3 tbs herbs de provence
      1 tsp allspice
      1/2 tsp black pepper
