Shopping List:
1 12-15 lb Turkey (Defrosted)
1 cup of Brine Mix (Kosmo's or whatever brand you like)
2 Gallons of water
1 cup brown sugar
1/4 cup hot sauce
1/4 cup worcestershire sauce
4-5 cloves of garlic
2 oranges
1 lemon
2 onions
4 stalks celery
4 tbsp chicken base (better than bouillon)
2 cups chicken stock
fresh herbs (rosemary/thyme/sage)
1 1/2 sticks of butter
cajun seasoning
salt, pepper, garlic, onion powder, italian seasoning
2 gallons peanut oil (if frying)
1 cup chicken stock & 1 full scoop bird booster injection marinade
Directions:
Defrost Turkey and remove giblets, neck, and any plastic. Clean based on your preference. Boil 1 gallon of water and add brine mixture along with brown sugar, hot sauce, worcestershire sauce, 2 oranges, celery, onion, chicken base, garlic, and fresh herbs. Bring to a boil for 5 minutes and stir. Turn off heat and add ice. Allow this to come to room temp (add 1 gallon of water to this solution) Submerge turkey in brining liquid and keep cool for 24 hours (fridge or cooler)
After 24 hours, remove turkey and rinse/dry. Make injection by mixing water with injection mixture (OR use Tony's store bought creole butter injection) Inject Turkey evenly and then season generously.
If Deep Frying, fill fryer with peanut oil and get oil temp to 350 degrees. Deep Fry turkey for 3-4 minutes PER POUND or until it is golden brown and white meat registers 160-165 and dark meat is at least 175.
Oven Method:
Preheat oven to 325. Inject and season turkey as seen above. Prepare your roasting pan by adding chicken stock, butter, herbs, veggies, and chicken base. Place turkey on roasting rack and tuck wings. Stuff cavity with remaining citrus and veggies/herbs. Tie legs together as seen in the video.
Roast in oven at 325 for 12-15 minutes PER POUND. After 1st hour, begin basting Turkey every 15-30 minutes. Once it registers 160-165 in the white meat and 175 in the dark meat, it's done. Allow it to rest for at least 30 minutes before carving. Enjoy! - Zábava

Come see me bro
The Turk looks delicious can wait to try this recipe
Please tell me what is the track name that you play at the beginning keep pushing out these tasty meals
I am gonna make it tomorrow. Why wait till Thanksgiving. Anytime is a good time for Turkey.
The brine mixture used in this video looks very flavorful. I use a maple and bourbon brine (plus other ingredients of course 😅). It turns out perfect 😋 my mom begs me ever year to make it, that and a lavender turkey I make. Both of these are her favorite. But I'm curious to try Kosmo's brine mixture and your add ins, because your brine looks on point 👍 intense flavor.
Could you tell me how you do a lavender Turkey?? Never heard of it before
sounds good! Give it a try and let me know how it goes
The notification click was so fast 😃

I will look into that! thanks for your support
Surprise u didn't wash ur turkey before brining ❤️
Exactlywxid
👍👍👍👍
This turkey was F A B U L O U S. HAVE MERCY.
what if we don’t use a roasting pan and use a oven bag should we add all the chicken stock and herbs in the bag??
I want to make the fry turkey but couldn't find the fryer you listed here, that link does not work, I tried searching a different one but they super expensive. question, did you brine the turkey you fried as well?
Can we use this for a whole chicken!? Substitute out the turkey related ingredient items?
Sure I don’t see why not
What kind of seasoning would you use in your injection to make the turkey spicey. (Spicey fried turkey)
hot sauce, cayenne pepper
Was wondering can you wash a whole chicken like you did the turkey in the beginning?
yes
Can I use a regular pan? Only have one pan that has the roasting rack and I'm making more than one turkey this year. So I'm wondering if I can make in the roasting pan and one in a regular pan or aluminum pan
Yes, you will want to elevate the turkey though... maybe lay it on a bed of herbs and veggies
@@MrMakeItHappen awesome! Thanks!
Did you cover the turkey with foil before baking?
nope
so i bought everything i need but couldn't find a brine mix at grocery store any suggestions also is there another way to bypass the injection process like is it really necessary.. or can i just use some butter and seasoning on the turkey ???
I would highly recommend the injection and you can make your own brine if you want 2 Gallons of water
2 cups of kosher salt
2 cups brown sugar
2 tbs garlic
3 tbs herbs de provence
1 tsp allspice
1/2 tsp black pepper
with a little color grading, more zoomed out shots, and some audio cleanup, there's no difference in quality between these videos and videos with 1m+ views
Keep going man!
Thank you! Doing my best to keep improving the quality
Can you bring 48 hours? Would that increase the flavor?
How do you feel about buttering the turkey after the brine and mixing in fresh herbs and what not? Will it make the skin less crispy? Or do you think it’ll throw off the taste? Pretty new at making turkeys still 😂
I have done them that way and they're good but I feel like it makes the turkey skin cook unevenly.. tastes good but not the best presentation
Can you deep fry parts of turkey ie. wings and thighs instead of whole turkey?
Yes
Why do most people use melted butter for injectibles?
👍👍👍👍👍👍🥰 You are an Amazing Chef . Thank you for Scrumptious Recipes, for your Entertaining Personality and for your love of Family and Food. BTW Where and when did you get your Mr. Make It Happen Cutting Board ? That's Classy Sir 🥰💖 Oh , those Turkeys were the best I've seen prepared and I've seen a few. Going to share with my Son who loves to cook for His Family.
thanks for your support! I got it from a company called Mac Cutting Boards
I have turkey legs and wings as we do not like the whole turkey. Is it okay to put our turkey wings and legs in a brine? How will I reduce the ingredients as the total weight is not more than four pounds. Thank you,
I was wondering the same thing,,,thighs n wings for us
Yes.. this turkey was 12 lbs so maybe reduce it by 2/3
don't sleep on the breast!! I promise it wont be dry lol
Question Did you brine your deep fried turkey as well?
Yes
It's too late for me to find kosmo turkey brine. What else can I use? Like kosher salt, adobo, sazon? I couldn't find turkey paste pasta either, what can I use in replace of this?
Chicken base instead of turkey or chicken bouillon cubes...
Brine.
2 Gallons of water
2 cups of kosher salt
2 cups brown sugar
2 tbs garlic
3 tbs herbs de provence
1 tsp allspice
1/2 tsp black pepper
@@MrMakeItHappen you are super awesome thank you so much for responding so quickly. Have a blessed Thanksgiving with your family.
😁
Check my newest video too
I went to five grocery stores in Maryland and Virginia and couldn’t find the turkey paste for the brine 🤦🏾♀️
You can use chicken bouillon or chicken base
Whattttttt deep fried Turkey 🤯🥵😋. You know what I don't even want to hear it. I'll click like and leave. This is not even fair to watch 😥😭😭😭😭😭😭😭😭.
lol Thanks for your support
I'm late seeing this... but my question is... my husband has high blood pressure so I've never brined turkeys but I really want too have you ever done this without the ingredients that have a lot of sodium? Every brine I come across calls for lots of sodium
Pepper steak please!!!!!!!!!
The fryer on Amazon is $499.00
I see them for between $100-$200
Jiiiiiiiiiiii
For some it's twice a year. Lol
Would you brine your turkey if you are going to fry it?
Yes I always do
Is he married?
Yesss I asked that one time before...I’m about to find him...lol
Lol I am.. my social media info is in the description box.. check me out on IG, twitter, and tik tok
