my mom made this but it was a much simpler one and was a traditional Chinese dish from xi'an where you would take ur chilli flakes and garlic and pour hot oil over it and add soy sauce into ur noodles and serve it is soooooo good it is called 油泼面 in Chinese and people just call it hot oil noodles in english
It's basically gnocchi, but in noodle shape. Not really tasting too close to noodles but still a very good dish if made correct. Search up gnocchi if you want a more authentic dish
In my country instead of boiling those noodles (which are made the exact same way btw) you cut them in circles and then you cook them and serve with fried bacon pieces and onion. It's called "kopytka" (little hooves) and it's absolutely amazing ❤
