The Dream Meal: Foie Gras, Brined Pork, and Churros

Chef Dave Bohati of the Calgary restaurant Market is redefining the word "local" with in-house baked bread, homegrown micro greens, on-site butchery, and homemade cheese. It's safe to say that every dish at Market is hand crafted. On this episode of Chef's Night Out, Chef Bohati hits the streets of Calgary with his best friends and fellow cooks in the kitchen, Daniel “Papi” Ramon (pastry chef) and Brandon Dashney (sous chef). The night begins with mouthwatering ramen at Shiki Menya, followed by foie gras butter at Brasserie Kensington (just wait till you see it...), and hydrated with Negronis at Milk Tiger Lounge. The crew ends the night back at Market with pork that has been brined for seven days, smoked for six hours, and braised for 12 hours. Plus, there is a bison strip loin and some churros thrown in for good measure. Get ready for meat envy.

lets all get along and just enjoy watching the crazy flavors and creations of food. it's amazing. there are tons of people with posh personalities, but so what. theyre not spitting on the homeless or acting like bigots.

Maybe not the best episode. However, the food back at Market, their restaurant, rocked it. Bison, the brined, smoked and braised pork leg, amazing.
All I see are 3 friends that work well together. Hate on them if you want, but they're still in business and working together fine. It's funny how many people in the comments clearly don't know the industry.

I don't know what part of Japan that he is talking about that doesn't make fresh Ramen noodles, but for a person like me that was raise in Japan since age two, there are 100's of locations in difference cities in Japan that do make fresh noodles, Soba. My second parent's restaurant in Osaka does daily.

if you're using such a sick knife, traditional french back and fourth slicing isn't needed. Try using that long blade, in one long, well thought out slice. I think you'll find a much cleaner line for presentation, some say it even effects the flavor. Nice spread. big ups to what you guys are doing. delicious

Ummmmmm there's alot of techicalist what your comment implied...first sashimi traditionally was pickled (ceviche style ) back in early Japan to preserve seafood...but then the Japanese with their innovational skills found ways to get away from this....hence salting, drying and etc...ceviche in the other hand is a one way process and that is...citrus fresh seafood cooking process...I firmly believe in ceviche process...but what this

Cal-gary - the coldest place i've ever been to in my life . It's ridiculous how cold it is there in the Winter. Not much to do there but drink yourself into oblivion and watch hockey .

They had it cold pressed, so it's not full of chemicals or the cacky parts of the seed. Cold pressed canola is a good neutral oil that won't overwhelm the tuna but adds fat because albacore is a much cheaper tuna than blue or yellowfin that doesn't have the fat content in the belly or the colour. The flavour is much less meaty too. Basically they're trying to get richness into a cheaper meat without destroying the more delicate flavour.
